Made with ground beef, crispy bacon, and melted cheddar cheese, these juicy air fryer meatballs are a fun twist on a classic cheeseburger that will have your taste buds singing with delight. Plus, they’re easy to make in your air fryer, and your kitchen will smell like an In-And-Out afterwards.

Over the years, I have tried so many different meatball variations. Prior to starting my low carb journey, I thought that breadcrumbs were required in order to keep meatbalsl intact. During my keto journey I also experienced with other nut flours and pork rinds to replace the traditional breadcrumb.

Eventually, I got to a point where I was in a pinch for dinner, didn’t have any extra ingredients on hand, and said “screw it”! For the first time, I experimented making them without any sort of binder. And guess what? I realized the whole time I didn’t even need to use any binders at all.

HOW TO MAKE AIR FRYER MEATBALLS


STEP 1: PREPARE

Combine ground beef, cheese, salt, pepper, onion powder, garlic powder, and Italian seasoning. Mix well with a wooden spoon or spatula until all seasonings are evenly incorporated into the beef.

STEP 2. ROLL


Using your hands (or an ice cream scoop), measure out meatballs and roll with your hands

STEP 3. WRAP


Wrap bacon around each meatball. You may also chop up the bacon and put it into the ground beef mix, but I prefer this method because it is more aesthetic and the crispy bacon adds some nice crunch in the air fryer!

STEP 4. COOK


Placing air fryer meat balls into air fryer.

Place meatballs on a single layer in the air fryer, flipping halfway for even cooking.

STEP 5. SERVE


Once done, remove the meatballs from the air fryer. Let them rest for a few minutes, then serve.

This is a very simple recipe that surprisingly only takes 15-20 minutes from start to finish, and the fattiness of the ground beef makes it undeniably satiating. The meatballs freeze well and you can throw them into the air fryer frozen, which means you can enjoy a quick and healthy snack anytime you’re craving something meaty and cheesy. This recipe will also work with ground chicken and pork, but the for the cheeseburger taste, opt for beef!

👉 CAN I FREEZE THESE MEATBALLS?

These meatballs freeze great and are perfect for meal prep. They can be frozen raw or cooked. Either way, lay the meatballs down in a single layer on a baking sheet for at least 30 minutes before tossing them all together in a freezer safe container or bag.

👉 HOW DO I COOK THESE MEATBALLS IF FROZEN?

If you are using the air fryer, cook them for 20 minutes to ensure that an internal temperature of 160F has been reached.

👉 CAN I SUBSTITUTE THE GROUND BEEF FOR ANOTHER MEAT?

This recipe will work just as well with ground chicken, turkey, veal, or pork!

👉 HOW DO I STORE THE LEFTOVERS?

You can store any leftovers in the fridge for up to 2 days, or you can freeze them for up to 3 months. For freezing, place them in a single layer on a baking sheet for 1 hour before throwing them into a freezer safe bag, this will help prevent the meatballs from sticking together when they are frozen.

👉 CAN I COOK THESE MEATBALLS IN THE OVEN?

Absolutely, cook them at 375F for 20-25 minutes or until an internal temperature of 165F is reached.

  • 1 Air Fryer 7 quart

Ingredients
  

  • 600 grams ground beef 80/20 or 85/15 recommended
  • 10 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning

Instructions
 

  • Preheat air fryer to 400°F for 5 minutes
  • In a large bowl, combine ground beef, cheese, salt, pepper, onion powder, garlic powder, and Italian seasoning. Mix well with a wooden spoon or spatula until all seasonings are evenly incorporated into the beef.
  • Using your hands, roll meatballs into 1" diameter meatballs, this recipe makes make about 20 meatballs.
  • Using a small paring knife or scissors, cut each piece of bacon into half and wrap one piece of bacon around each meatball.
  • Place meatballs on a single layer in the air fryer and cook at 400 degrees for 10 minutes, or 375 degrees for 15 minutes. The meatballs should reach an internal temperature 160°F.
  • Remove the meatballs from the air fryer and let them rest for a few minutes before serving.
