INGREDIENTS & SUBSTITUTIONS

โญ๏ธ EGGS – Organic or pasture-raised eggs are best.

โญ๏ธ GROUND PORK – You can use breakfast sausage or ground pork. If you use breakfast sausage, try to find one that has no sugar and minimal processing. You can also substitute pork for ground beef or any ground meat that you have on hand.

โญ๏ธ SALT – If you are using breakfast sausage, it is likely already seasoned with salt.

โญ๏ธ ITALIAN SEASONING (OPTIONAL) – I find that the addition of Italian seasoning is very complimentary to the ground pork and egg mixture, but feel free to omit or substitute for any spices of your choice. Italian seasoning is a blend of oregano, basil, thyme, rosemary, and marjoram. Other seasonings that would go well with these scotch eggs include dry mustard, garlic powder, and onion powder.

TIPS AND TRICK FOR SUCCESS


TIP #1: Put the eggs into cold water before bringing the water to a boil. Placing cold eggs directly into boiling water will result in cracking.

TIP #2: If you are going for a soft-boiled interior, use room temperature eggs, not eggs straight out of the refrigerator.

TIP #3: To ensure that the eggs do not over-boil, use a timer for 4 minutes. Do not guess on the timing.

TIP #4: If you are using breakfast sausage, check the ingredient label for spices or salt that may have already been added to the sausage.

HOW TO MAKE BAKED SCOTCH EGGS


STEP 1: Boil eggs in water.

STEP 3: Prepare pork by removing any casing and adding seasonings.

I recommend checking the ingredient label on the breakfast sausage to see whether/which spices have already been added, before adding your own.

STEP 4: Using your hands, wrap a layer of sausage around the egg, ensuring that all sides of the egg are evenly covered.

The layer of pork should be 0.25″ in thickness wrapped around the egg.

STEP 5: Place onto a baking tray.

Ingredients
  

  • 2 pounds ground pork or pork sausage
  • 4 whole eggs
  • 2 teaspoon salt
  • 2 teaspoon Italian seasoning (optional)

Instructions
 

  • Preheat oven to 400F.
  • In a medium-sized stockpot, add eggs to cold water. Place stockpot on high heat and bring to a boil. Once the water comes to a rolling boil, set a timer for 4 minutes (for softboiled) and 7 minutes (for hardboiled).
  • After the timer is up, remove the eggs from heat and place in cold water for 1 minute to stop the cooking process.
  • If you are using breakfast sausages, remove any casing. Add salt and Italian seasoning to taste.
  • Using your hands, form two patties that are 3" in diameter. Gently sandwich each egg with the two patties. Continue to wrap the egg with the pork until the egg is no longer visible. The thickness of the layer of pork should be no greater than 1/4".
  • Line a small baking sheet (6×9" or 9×13") with parchment paper and lay down scotch eggs. Bake for 30 minutes or until pork has reached an internal temperature of 160F and is fully cooked through.
