Beef Brisket Noodle Soup (with Carnivore Noodles)

If you’re looking for keto asian recipes, you’ll love this one! We grew up eating the traditional HK style beef brisket noodle soup, which was a comfort dish for us.

Disclaimer: The Carnivore noodles in this recipe were dedicated to us by our friend Chris at ChrisCookingNashville! We recently did a Youtube collaboration with Chris for Carnivore friendly Beef Stroganoff, and we using his Carnivore-friendly noodle recipe for these beef brisket noodles.

The recipe features beef brisket and tendon stew which we make in our instant pot and have a separate recipe for.


✅ Carnivore noodles hold up very well in the soup, even for extended periods (no soggy noodles!)

✅ The Carnivore noodles are not overly “cheesy” as many regular keto noodles with a mozzarella cheese base can be, making this a good noodle substitute to eat with the rich flavours of beef brisket.


⭐️ BEEF FINGER MEAT (OR BRISKET): “Beef finger meat” is not a standard or widely recognized term in the culinary world or the beef industry. It is the meat in-between the rib bones, that requires slow cooking and is incredibly tender. It can be found at Asian butchers and can be substituted for brisket.

⭐️ BEEF TENDONS: A pure protein, connective tissue that is found in the muscles of the cattle. When cooked for long periods (or in the instant pot), becomes gelatinous and has a chewy texture.

⭐️ COCONUT AMINOS: Used as a soy sauce replacement.

⭐️ FISH SAUCE: We recommend the Red Boat brand, which is a pure fish sauce which has rich umami that helps replace the traditional Asian flavours.

⭐️ GINGER: Optional, used for blanching the beef.

⭐️ WHOLE EGGS: Organic, pasture raised eggs are always a great choice.

⭐️ EGG WHITE POWDER: Look for single-ingredient egg white powder. This can be found at local gourmet food stores or on Amazon. Egg white powder is great for baking and is Carnivore friendly.

⭐️ MOZZARELLA CHEESE: We have only tested the noodle recipe with whole mozzarella that we shredded ourselves. It is possible that the cellulose in pre-shredded cheese may impact the texture of the noodles.

⭐️ PORK GELATIN: Using the KNOX brand, but beef gelatin can be used as a substitute.


STEP 1: Prepare the meat by chopping into cubes, then blanching on the stovetop.

STEP 2: Put the finger meat and tendon into the instant pot.

Pressure cook on high and allow for a natural release.

STEP 3: Combine ingredients for noodles in a food processor, then pour into silicone baking trays.

If you do not have any silicone baking trays, you can use parchment paper instead and just fold up the edges.

Using the silicone baking tray just helps with even texture, and also helps the noodles become more aesthetic.

STEP 4: Bake the noodles in the oven.

Once the noodles are cool, slice into thin pieces.

The noodles hold up incredibly well in the soup. I recommend storing them in a ziploc container or air-tight container, and they will maintain it’s texture and taste for up to 7 days.


TIP #1: To prevent the noodles from going soggy, only serve what will be eaten right away with the brisket soup liquid. Store leftover noodles in an air-tight container separately.

TIP #2: Allowing 10-15 minutes for the brisket and tendon to natural release in the Instant Pot allows the texture to be more tender.


Although the noodles hold very well in the soup, you will want to store the noodles separately from the soup base.


Store in an air-tight container for up to 7 days in the fridge.


Store in an air-tight container for up to 3 months. To reheat, allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

To serve together, reheat the soup base on the stove top by bringing the soup to a boil, then add the noodles back in.



This recipe is technically keto friendly. The noodles are intended for Carnivore dieters and may be replaced with other keto noodle options (eg. shirataki or miracle noodles).


This recipe is ketovore friendly.


If you are a strict Carnivore, you will want to omit the ginger used in the blanching process and skip the coconut aminos. However, skipping the coconut aminos will not produce the traditional soy sauce Asian flavour that this recipe intends to create. Regardless, you can still follow this as a cooking technique!



There is a little bit of mozzarella cheese used for the noodles as it is required to create the noodle texture in a Carnivore-friendly manner, but we would say that they are more egg-y than cheesy.


Coconut aminos is a soy sauce alternative used in various culinary applications, especially in health-conscious and gluten-free diets. They are made from the sap of coconut blossoms, which is then fermented and blended with salt.

Beef Brisket Noodle Soup

  • 2.5 pounds beef brisket or finger meat
  • 2 pounds beef tendon
  • 2 pieces ginger, sliced
  • 1/2 cup fish sauce (Red Boat brand)
  • 1/2 cup coconut aminos
  • 300 ml beef broth
  • 300 ml water

Carnivore Noodles

  • 8 whole eggs
  • 1/2 cup mozzarella cheese, shredded
  • 2 tsp pork gelatin powder
  • 2 tbsp egg white powder


  • Beef Brisket & Tendon
  • Clean and chop beef brisket into 1-1.5" cubes.
  • Boil water in a large stockpot or wide pan with high sides, add brisket, tendon, and ginger slices. Boil on high heat for 5-6 minutes, allowing for all the impurities to be drawn from the meat.
  • Drain pot and clean off any remaining impurities from the meat with cold water.
  • Add brisket and tendon to the instant pot. Add fish sauce, coconut aminos, beef broth, and water. Ensure that meat is sufficiently covered with liquid to prevent burning; add more beef broth or water if needed.
  • Pressure cook on high for 30 minutes. If time permits, allow for a 15 minute natural release for a more tender outcome.
  • Remove tendon from the pot and chop into 1-1.5" cubes. Place chopped tendon back into the Instant Pot and mix everything well.

Carnivore Noodles

  • Preheat oven to 350F.
  • In a blender or medium-sized food processor, combine eggs, shredded mozzarella cheese, pork gelatin powder, and egg white powder.
  • Blend on high for 1-2 minutes or until mixture is fully combined.
  • Pour mixture into silicone baking sheets, or a baking sheet lined with parchment paper (if using parchment paper, make sure you fold the edges up).
  • Bake in the oven for 15 minutes and let cool for 5 minutes.
  • Cut the noodles into thin strips (0.5" diameter).
  • Serve the soup and noodles together.
