This is a very simple beef sirloin tip roast recipe featuring a bacon weave. This recipe is perfect for a pure Carnivore diet and features an great cut of beef that is available at most grocery stores!

This cut is from the hindquarters of the cow and is often a tougher cut- the larger the muscle, the tougher the cut. A beef sirloin tip roast should be slowly cooked to allow for the meat to tenderize.

TIP #1: Let the beef sirloin tip roast rise to room temperature before putting it into the oven.

  • 2.5 pounds beef sirloin tip roast
  • 250 grams bacon
  • 1 teaspoon salt (adjust up to 2 teaspoons to taste)


  • Preheat oven to 350F.
  • Remove roast from the refrigerator for 45-60 minutes before cooking.
  • Season all sides of the roast generously with salt.
  • Wrap sirloin tip roast with bacon strips, either into a weave pattern or by gently laying the bacon on top of the roast.
  • Place beef roast onto a baking tray, on top of a baking rack.
  • Place a meat thermometer into the centre of the roast.
  • Bake the sirloin tip in the oven until internal temperature is reached (for medium, this is 145F).
  • Let the roast rest for 15 minutes before carving and serving.
