If you are a mushroom lover, look no further! I have personally always loved stuffed mushrooms. This is my unique twist on stuffed mushrooms with a sardine filling, which is one recipe you can consider if you are looking for a way to incorporate more sardines into your diet.

INGREDIENTS & SUBSTITUTIONS

⭐️ WHOLE MUSHROOMS: Any button brown or white mushrooms will work, I am using crimini mushrooms

⭐️ CANNED SARDINES: Opt for sardines in spring water. If you cannot find sardines in spring water, you can use sardines in olive oil. I am using Brunswick brand sardines here, but other brands I’d recommend include King Oscar and Wild Planet. You can also use fresh sardines if you have access to them, but they will require additional preparation (cleaning and de-gutting).

⭐️ PORK PANKO: Helps with the texture of the stuffing mixture

⭐️ OLD BAY SEASONING: My favourite “catch-all” seasoning for any seafood dish. You can substitute with a blend of 1/4 teaspoon celery salt with 1/4 teaspoon of paprika.

⭐️ GREEK YOGURT: Optional, can substitute with sour cream.

⭐️ WHOLE EGG: Helps with the texture of the mixture.

⭐️ DRIED THYME: Optional, can substitute for dried oregano

HOW TO MAKE BEST STUFFED MUSHROOMS


STEP 1: Clean and prepare mushrooms.

Clean mushrooms by gently wiping them with a damp paper towel or using a soft brush. Avoid rinsing them with water, as mushrooms can absorb excess moisture.

STEP 2: Chop up stems of mushrooms.

STEP 3: Prepare filling for stuffing.

STEP 4: Stuff each mushroom with the filling.

STEP 5: Bake stuffed mushrooms in the oven.

TIPS & TRICKS FOR BEST STUFFED MUSHROOMS


TIP #1: Don’t discard the mushroom stems. Finely chop them and incorporate them into the sardine stuffing mixture for added flavor and texture.

TIP #2: When removing the stems, be gentle to avoid breaking the mushroom caps. You’ll need the caps intact for stuffing.

TIP #3: Feel free to top with additional mozzarella cheese or parmesan cheese before baking, for added flavour.

TIP #4: Stuffed mushrooms are best when served immediately after baking while they are still warm and crispy.

TIP #5: Drain sardines well to prevent excess moisture. Additionally, drizzling a bit of oil on top before baking can help with browning and flavor.

HOW TO STORE LEFTOVERS


FRIDGE

Store for up to 5 days. To reheat, heat on high in the microwave for 3-5 minutes or re-heat in an oven-safe dish at 350 degrees for 15 minutes.

FREEZER

I would not recommend freezing these stuffed mushrooms as they are best served fresh or within a few days.

👉 WHAT MUSHROOMS WORK BEST?

You can use various types of mushrooms, such as cremini, button, or portobello mushrooms.

👉 DO I NEED TO REMOVE THE GILLS FROM THE MUSHROOM CAPS?

Removing the gills can create more space for the stuffing. If you do not remove the gills, then you will want to make sure you have enough mushrooms for the filling.

Best Stuffed Mushrooms With Sardines

Cook Time 20 minutes

Ingredients
  

  • 10-15 small mushrooms, caps removed
  • 1 whole egg
  • 1/4 cup pork rinds, crushed
  • 1 tablespoon greek yogurt
  • 1 can sardines, drained (~3 ounces)
  • 1/8 teaspoon Old Bay Seasoning
  • 1/8 teaspoon dried thyme
  • 1/4 cup mozzarella or parmesan cheese, shredded (optional)

Instructions
 

  • Preheat oven to 350F.
  • Clean mushrooms by gently wiping them with a damp paper towel or using a soft brush. Avoid over rinsing them with water, as mushrooms can absorb excess moisture.
  • Prepare the mushrooms: Remove the stems from the mushrooms and carefully scoop out some of the gills (with a small spoon) to create more room for the stuffing.
  • Pour chopped mushroom stems into a bowl. Add egg, pork rinds, greek yogurt, drained sardines, old bay seasoning, dried thyme, and mix thoroughly.
  • On a 9×13" baking sheet lined with parchment paper, lay down mushrooms.
  • Optional – Top of with any of your favourite grated cheese.
  • Bake for 20 minutes.
