⭐️ GROUND BEEF – Can be substitute for any ground meat, such as ground chicken or ground pork

⭐️ DEHYDRATED BEEF LIVER – We are using Carnivore Crisps’ dehydrated beef liver in this recipe, but feel free to use fresh beef liver. We recommend calf liver rather than mature cows’ liver as it has a more mild flavour and is more palatable

⭐️ PARMESAN CHEESE – Can substitute for Romano cheese

⭐️ PORK RINDS – If you do not want to use pork rinds, you can double the amount of dehydrated beef liver used instead.

⭐️ GARLIC AND ONION POWDER – For additional flavour. These may be omitted if you have any spice intolerances.


STEP 1: Prepare ingredients by grinding pork rinds and dehydrated beef liver.

If you are using fresh liver, clean the liver thoroughly with water, removing any blood. Pat the liver thoroughly to remove as much moisture as possible.

STEP 2: Combine ground beef, beef liver, parmesan cheese, and pork rinds.

STEP 3: Roll into individual meatballs

This recipe makes about 16 meatballs, but this can vary depending on how large you make them.

Q: Will this work with real beef liver?

A: Yes, you can substitute the dehydrated beef liver with 1/3 cup of fresh beef liver. Make sure you dry and clean the beef liver thoroughly.

Q: Will this work with chicken liver instead of beef liver?

A: Yes, the flavour will be a little more mild if you use fresh chicken liver.

Q: What other ingredients can I add to the meatballs if I want more flavour?

A: Onions are a popular and aromatic compliment to liver. You can use add 1/3 cup of chopped onion to the raw meatball mixture.

Q: How do I know the meatballs are done cooking?

A: Use a toothpick and poke into the meatball, if it comes out dry then the meatballs are done. Alternatively, you can use a meat thermometer and test that the beef has reached an internal temperature of 170.

  • 1/4 cup dehydrated beef liver, ground (uses 5-8 pieces of Carnivore Crisps dehydrated beef liver)
  • 1/4 cup pork rinds, ground
  • 600 grams ground beef
  • 1/4 cup parmesan cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)


  • Preheat oven to 350 degrees.
  • In a small food processor, grind up pork rinds.
  • In a small food processor, grind up dehydrated beef liver.
  • Combine dehydrated liver, liver, pork rinds, ground beef, parmesan cheese, salt, garlic powder, and onion powder. Form into meatballs with your hands, approximately 0.75-1" in diameter.
  • Bake in preheated oven for 25 minutes, or until beef is fully cooked.
