Just because you’re on the carnivore diet, doesn’t mean you can’t enjoy some low carb salmon patties! This recipe is a great snack and only uses animal-based ingredients. The best part is that there is no sacrifice of texture, the salmon cakes hold together very well, and are meal prep and freezer friendly. From start to finish these carnivore salmon patties only take about 15 minutes.

INGREDIENTS & SUBSTITUTIONS

โญ๏ธ PORK RINDS – As with most of our carnivore recipes, these pork rinds are used as the binding agent for the salmon cakes.

โญ๏ธ CANNED SALMON – Canned salmon can be substituted for cooked salmon, especially if you have any leftovers on hand. You may use Atlantic salmon or sockeye salmon; Atlantic salmon is higher in fat but has a less robust flavor profile compared to canned salmon. Salmon can also be substituted entirely for canned tuna.

โญ๏ธ EGG – Opt for grass-fed, pasture raised if possible

โญ๏ธ PORK GELATIN POWDER – Used as a binding agent to help the low carb salmon patties achieve a firm texture. You can omit this, but you will have to double the amount of pork rinds. You should be able to find this at any grocery store (usually sold in the same aisle as Jello), as it is normally used as a dessert ingredient. The brand we use (KNOX) only contains one ingredient is derived purely from pork, with no additional additives.

HOW TO MAKE LOW CARB SALMON PATTIES

STEP 1: Grind up pork rinds

STEP 2: Combine ingredients in a bowl

STEP 3: Using your hands, form patties

STEP 4: Cook on stovetop until golden brown crust forms

STORAGE INSTRUCTIONS


FRIDGE

Store these low carb salmon patties in an air-tight container for 3-4 days in the fridge. You can reheat them by putting them in the microwave on high for 1 minute, or warm up in a frying pan for 2 minutes a side.

FREEZER

Store these low carb salmon patties in the freezer for up to 3 months. I always recommend freezing after they are cooked to help the cakes hold their texture better.

๐Ÿ‘‰ IS PORK GELATIN POWDER CARNIVORE FRIENDLY?

Yes, gelatin is made from collagen. Like other types of gelatin, this collagen is obtained from animal bones, skin and connective tissue. Unflavored gelatin powder has no additives and is essentially pure protein.

๐Ÿ‘‰ WHAT CAN I SERVE WITH THESE?

For a pure carnivore diet, you can serve these with greek yogurt. If you allow other condiments in your diet, avocado mayonnaise also pairs well.

๐Ÿ‘‰ CAN I MAKE THIS WITH TUNA INSTEAD OF SALMON?

Yes you can!

๐Ÿ‘‰ CAN I ADD SPICES AND FLAVOURINGS?

If you are on a strict carnivore diet with no spices, then follow the recipe as is. If you would like to add spices, we recommend Italian seasoning, dried dill, or dried parsley. To kick it up a further notch, you may also add some fresh lemon juice as well.

Absolutely! Air fry at 350 for 3-5 minutes and adjust timing as needed.

Ingredients
  

  • 1 cup pork rinds, ground
  • 8 oz can of sockeye or Atlantic salmon
  • 1/4 teaspoon pork gelatin powder
  • 1 whole egg
  • 1 tablespoon beef tallow

Instructions
 

  • In a small food processor, grind up pork rinds.
  • Add pork rinds to a medium mixing bowl. Drain canned salmon and ensure all moisture is removed. Add salmon to mixing bowl with egg and pork gelatin powder. Mix until combined.
  • Using your hands, form mixture into patties that are 2" in diameter and 1/4" thick. This recipe makes about 4 patties.
  • On a medium sized frying pan, add beef tallow and cook on high heat until melted.
  • Cook salmon patties for 2-3 minutes per side until golden brown crust is achieved.
