Beef meatloaf, the classic American weeknight for the family. โœ… Meatloaf holds together very well and has a great texture, with no need for traditional meatloaf ingredients like breadcrumbs, oats, or flour

TIPS & TRICKS FOR SUCCESS


โœ… Use a higher fat ground beef such as 80/20 or 85/15 as it will ensure maximum tenderness of the finished meatloaf

โœ… You can also cut the bacon into small pieces and add to the mixture. Both will render great flavour from the bacon. I personally just find that having the bacon strips on top is more aesthetic!

INGREDIENTS AND SUBSTITUTIONS


โญ๏ธ PORK RINDS – Substitute for pork panko. I would not recommend any other substitution as the texture of the pork rinds is necessary to help the meatloaf hold its shape and final texture.

โญ๏ธ PARMESAN CHEESE – Substitute for romano cheese or Pecorino cheese

โญ๏ธ GROUND BEEF – Any ground meat will work here, so feel free to substitute for ground chicken, pork, or veal. We recommend a fattier ground meat for the best flavour.

โญ๏ธ WORCESTERSHIRE SAUCE – This optional if you are doing strict carnivore, feel free to omit or substitute for coconut aminos if that is allowed on your diet.

STEP 1. Grind up pork rinds

I would recommend a loaf pan as it will hold its shape better.

A: It depends how strict of a Carnivore diet you are following. The sauce is optional.

A: The pork rinds can be substituted with almond flour. You can add seasonings such as garlic powder, onion powder, bell peppers, Italian seasoning. The meatloaf can be served with a low sugar/sugar-free barbecue sauce or ketchup.

Ingredients
  

  • 1 pound ground beef
  • 1 cup pork rinds, ground
  • 1 whole egg
  • 1/4 cup parmesan cheese
  • 1 tsp Worcestershire sauce (optional)
  • 5 slices bacon

Instructions
 

  • Preheat oven to 350F
  • In a small food processor, grind up pork rinds.
  • In a medium sized bowl, add ground pork rinds, ground beef, egg, parmesan cheese, and Worcestershire sauce. Mix until fully combined.
  • Pour ground beef mixture into a 9×5" small pan loaf and top off with slices of bacon.
  • Bake for 30 minutes or until internal temperature of 160F is reached.
