Our keto pasta recipe is Carnivore friendly and is taken from our friend Anita at KetogenicWoman, with our spin on a low carb alfredo sauce and air fryer chicken.

INGREDIENTS & SUBSTITUTIONS


⭐️  CHICKEN THIGHS – This keto pasta recipe is paired with chicken thighs that are cooked in the air fryer with a simple seasoning. You may substitute the chicken for any protein of your choice; we would recommend pork chops, pork belly or sirloin steak.

⭐️ SEASONINGS – We are using salt, black pepper, garlic powder, and onion powder. You may also add/use Italian seasoning, paprika, and dried parsley.

⭐️  ALFREDO SAUCE – If you are seeking a dairy-free option, you may substitute the alfredo sauce for any tomato-based red sauce.

⭐️  HEAVY CREAM – The alfredo sauce uses a heavy cream base, which you may substitute with whole milk or half-and-half cream.

⭐️  PASTA – This recipe uses a pasta recipe taken from Anita @ Ketogenic Woman’s blog. There are four ingredients (eggs, cream cheese, pork rinds, parmesan cheese) and we would not recommend substituting any of these ingredients in order to achieve the appropriate texture.

CHICKEN ALFREDO KETO PASTA RECIPE


STEP 1. BLEND


In a food processor, grind up pork rinds.

STEP 2. COMBINE

Combine the ground pork rinds, eggs, parmesan cheese, and cream cheese and mix in a food processor.

STEP 3. POUR


Pour mixture onto a baking sheet.

STEP 4. BAKE


Bake the pasta until fully cooked and roll up loosely.

Chop the pasta into thin slices.

ALFREDO SAUCE

STEP 1. COMBINE


Cook alfredo sauce on the stove top using heavy cream, minced garlic, and parmesan cheese.

Combine finished pasta, cream sauce, and chicken and mix until evenly incorporated.

FAQ FOR KETO PASTA RECIPE


👉 WHAT ARE THE OVEN INSTRUCTIONS FOR THE CHICKEN THIGHS?

Bake at 400F for 35-40 minutes or until it reaches an internal temperature of 165F.

👉 HOW LONG CAN THE PASTA BE STORED FOR?

The pasta itself can stay in the fridge for up to 7 days in an air-tight container. Once combined with sauce, it can stay in the fridge for 2-4 days.

👉 DOES THE PASTA GET SOGGY?

The pasta has a very similar to an al-dente texture and does not get soggy when combined with sauce. The pasta also holds well in the refrigerator.

👉 HOW DO YOU KNOW WHEN THE PASTA IS DONE

When the edges begin to brown. The pasta should lift easily from the parchment paper.

👉 WHAT OTHER SAUCE CAN BE USED OTHER THAN ALFREDO?

You can substitute the alfredo sauce for any low carb, tomato-based sauce or low sugar barbecue sauce.

Ingredients
  

Keto Pasta (taken from Ketogenicwomen.com)

  • 3 whole eggs
  • 4 tablespoons cream cheese, room temperature
  • 3 tablespoons pork rinds, finely ground
  • 1 tablespoon parmesan cheese, shredded

Chicken

  • 4 bone-in, skin-on, chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Alfredo Sauce

  • 1 tablespoon butter
  • 1 teaspoon minced garlic optional
  • 1 cup heavy cream
  • 1.5 tablespoon parmesan cheese, shredded

Instructions
 

Keto Pasta

  • Preheat oven to 350F.
  • Grind up pork rinds in a food processor for 15-20 seconds or until very fine.
  • To the food processor containing pork rinds, add cream cheese, whole eggs, and parmesan cheese to the food processor and pulse together for 1-2 minutes or until fully incorporated.
  • On a 12×18 baking sheet with parchment paper, pour mixture down into a thin layer. Shape into a rectangle.
  • Bake for 10-12 minutes, or until edges begin to brown.
  • Cool for up to 15 minutes.
  • Roll pasta sheet and slice into 1/8" pieces.

Air Fryer Chicken

  • Preheat air fryer to 375F.
  • Season chicken thighs with salt, black pepper, garlic powder, and onion powder.
  • Air fry at 375 for 20-25 minutes or until internal temperature of 165F is reached.

Alfredo Sauce

  • In a small saucepan, add butter and minced garlic. Cook on medium heat until butter melts and aroma is released from garlic.
  • Add heavy cream and parmesan cheese.
  • Turn heat down to medium-low until mixture reaches a simmer. Allow mixture to cook for 2-3 minutes.
  • Allow mixture to cool for up to 5 minutes and thicken. The sauce is ready when it can coat the back of a wooden spoon without dripping off.

Chicken Alfredo Pasta

  • Combine alfredo sauce with pasta until all the sauce is incorporated evenly. Serve with chicken.
