Chuck Roast Crock Pot Recipe

This chuck roast crock pot recipe is a classic homestyle favourite, with a low carb twist on it. The traditional recipe usually contains vegetables such as potatoes and carrots, or requires the meat to be coated with starches before browning. Our version still produces a tender and juicy meat, and relies on the natural rich flavour of the beef to satisfy our taste buds!

INGREDIENTS & SUBSTITUTIONS

โญ๏ธ CHUCK ROAST – Also known as blade roast or blade-eye roast, can be found at any butcher. We get ours from Costco for the best value. This cut was designed for a low and slow braise, and does very well in the slow cooker.

โญ๏ธ MUSHROOMS – A very complimentary aromatic that brings out the deep earthy flavours of the beef. If you do not like mushrooms, you can omit them entirely, add extra onion and garlic, or substitute for eggplant or zucchini.

โญ๏ธ ONION – Using fresh will provide the best flavour but you can substitute this for onionpowder.

โญ๏ธ GARLIC – Similar to the onion, using fresh will provide the best flavour but you can substitute this for garlic powder.

โญ๏ธ BEEF STOCK – Can substitute for any liquid, including bone broth, chicken stock, or water.

HOW TO MAKE CHUCK ROAST CROCK POT


STEP 1: Clean and prepare chuck roast.

For portioning, aim for about 1/2 lb meat person if you are serving this with sides. If you are on Carnivore, aim for about 1lb per person. I am using a 6-quart slow cooker which fits a 3 lb chuck roast perfectly. Salt generously.

STEP 2: Prepare other ingredients.

For this recipe, the aromatics used include garlic, mushroom, and onion. These ingredients produce the earthy flavour that compliment the richness of the beef, adding depth without being overpowering. A rough chop of all ingredients to get them to uniform size is all that is needed.

STEP 3: Put into slow cooker, no additional liquid required.

If your chuck roast doesn’t come pre-tied, I would recommend tying the roast with some twine to help the meat stay together. This allows the roast to stay as moist as possible and not fall apart during the cooking process.

STEP 4: Cook low and slow

Note that cooking times may be adjusted depending on how much time you have. Use this table as a starting guide and adjust as needed.

This recipe is keto-friendly and does not require any modifications.

๐Ÿฅฉ CARNIVORE

You will need to omit the aromatics (mushrooms, onion, and garlic) for this recipe to be carnivore friendly. You can still use the same cooking technique and the end result of the tender texture will still be the same. For seasonings, stick with salt only. FAQ FOR CHUCK ROAST CROCK POT


๐Ÿ‘‰ DO I NEED TO SEAR THE MEAT BEFORE COOKING

It is optional and up to you. Because this method of cooking draws out all the flavour of the beef as is, I haven’t found it necessary to add an additional sear.

๐Ÿ‘‰ WHAT OTHER CUTS WILL THIS WORK WITH?

This recipe will only work with a cut of beef meant to be slow cooked, such as brisket, blade roast, or chuck roast.

๐Ÿ‘‰ CAN I COOK THIS ON HIGH INSTEAD OF LOW?

Yes, cooking times will vary. See table outlined in Step 4 of the blog post for a starting guide with high cooking pressure instead of low.

๐Ÿ‘‰ CAN I COOK THIS FROM FROZEN?

It is possible but best results from the slow cooker and cooking times come from a fully thawed piece of chuck roast.

๐Ÿ‘‰ CAN I USE THE INSTANT POT?

We have found the best results to come from the slow cooker. While you can use the Instant Pot (high for minimum of 90-120 minutes), the texture does not come out as tender or fall-apart as if it were slow cooked in the crock pot.

Ingredients
  

  • 3 pound chuck roast
  • 1 tablespoon salt
  • 1/2 pound chopped mushrooms
  • 1 small onion, sliced
  • 5 cloves garlic

Instructions
 

  • Clean chuck roast and pat dry with paper towel. For best results, tie the roast with twine. Season roast generously with salt.
  • Prepare ingredients by chopping onion and mushrooms into thin slices and uniform pieces. Crush garlic with the side of a knife.
  • In a 7-quart slow cooker, add chuck roast, onion, mushrooms, and garlic. everything into slow cooker and add liquid.
  • Cook on high for 8 hours, or until meat is fork tender and falls apart easily.

    Hi guys,
    I picked up a couple of these blade roasts at a good deal and froze one. I actually just put one into the crock pot at midnight following your instructions and will wake to a glorious smell in the late morning. It will be my 1st meal of the day about noon.
