Cornish Hen In Air Fryer (Rotisserie Style)

Once you try this rotisserie style Cornish hen in air fryer, you won’t want to eat regular chicken anymore! Fool proof cooking technique with the air fryer that leads to a crispy skin with juicy meat!

I have tested various air fryer whole chicken recipes in the past. Although I enjoy the taste of the whole chicken, I find that we have a hard time finishing all the white meat now that we are on a ketogenic and meat-based diet.

WHY CORNISH HENS?


Cornish hens are a breed of chicken that are smaller than mature whole chickens, sort of like the “petite cousin” to a regular chicken. Because of their size, it produces a very tender and flavorful meat which is easily able to absorb marinades and spices.

Sometimes there is just too much breast and white meat on a mature whole chicken. We love our dark meat and we are always left wanting more thighs and leg meat when we cook regular chicken. This is where cornish hens come in, because is has a much higher dark meat to white meat ratio. As the hens are small in nature, each hen is an appropriate serving size for one person, especially if you are not serving any other carbs!

INGREDIENTS & SUBSTITUTIONS


โญ๏ธ CORNISH HENS: These are approximately 1kg each.

โญ๏ธ BEEF TALLOW: Any high smoke point oil will do.

โญ๏ธ ROTISSERIE SPICES: You can use any spice blend of choice, but my go-to for rotisserie style chicken consists of paprika, thyme, salt, black pepper, garlic powder, and onion powder. The paprika can be substituted for cayenne pepper. Thyme can be substituted for dried oregano or dried parsley.

HOW TO MAKE CORNISH HEN IN AIR FRYER


STEP 1: Clean and dry the hens with paper towel.


By drying thoroughly, the skin will get very crispy in the air fryer.

STEP 2: Melt tallow and add seasonings to the tallow.


STEP 3: Add seasoning rub to the chicken.


Ensure that the hens are thoroughly coated with the seasoning rub.

STEP 4: Air fry the hens and flip halfway for even color and cooking.


TIPS & TRICKS FOR SUCCESS


TIP #1: Make sure the hens are patted very dry before adding the rub. The drier the hen, the crispier the skin will get in the air fryer.

TIP #2: Be gentle when flipping the hens, as the skin can puncture easily with tongs or utensils. This won’t affect the flavour but it is more of an aesthetic tip!

HOW TO STORE LEFTOVERS


This meal will likely produce leftovers as it is such a large cut of meat! When storing this meat, use an air-tight container and add the juices directly into the container. This will ensure that the meat retains as much moisture as possible and does not dry out.

FRIDGE

Store for up to 7 days. To reheat, heat on high in the microwave for 5 minutes or in an oven-safe dish at 350 degrees for 30 minutes.

FREEZER

Store for up to 3 months. To reheat, allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

Absolutely! For a whole chicken, you would have to adjust the cooking time to the air fryer to 45 mins-1 hour depending on the weight of the chicken, or until chicken reaches an internal temperature of 165F.

๐Ÿ‘‰ DO THEY HAVE A GAMEY FLAVOUR?

If the hens are cleaned well and the same rotisserie-style rub in this recipe is used, they will not produce a gamey flavour.

๐Ÿ‘‰ WHAT CAN I PAIR THIS CHICKEN WITH?

Serve with any condiments such as sugar-free ketchup, sugar-free barbecue sauce, or avocado mayonnaise. If you are on the ketogenic diet, this recipe will go well with low carb vegetables.

Cornish Hen In Air Fryer

Ingredients
  

  • 2 pounds cornish hen
  • 1 tablespoon beef tallow

Rotisserie Seasonings

  • 3 teaspoon paprika
  • 1 teaaspoon dried thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions
 

  • In a small bowl, melt beef tallow.
  • Add paprika, thyme, salt, black pepper, onion powder, and garlic powder to the melted beef tallow.
  • Using your hands or a pastry brush, spread the seasoning mix onto the skin of the hens. Ensure the hens are evenly covered on all sides with the mix.
  • Air fry at 375F for 30-40 minutes, flipping halfway. Cook until hens have reached an internal temperature of 165F.
