This crab omelette is carnivore friendly and an easy brunch recipe in under 15 minutes, featuring a can of wild crab! If you are looking for some brunch inspiration outside of your typical bacon and eggs, this is a great low carb alternative!

INGREDIENTS & SUBSTITUTIONS FOR CRAB OMELETTE

⭐️ WHOLE EGGS – Opt for organic and/or pasture-raised if possible, it makes all the difference when making a delicious omelette!

⭐️ CRAB MEAT – I am using canned crab for this recipe, but feel free to substitute with lump crab meat or fresh crab meat. If using fresh crab, I would recommend Dungeness crab as it is fresh and meaty.

⭐️ SOUR CREAM – Optional, but provides some additional richness and the tanginess balances out the dish. Substitute for greek yogurt if desired.

⭐️ SALT, PEPPER, PAPRIKA – Season to taste. You can substitute for Old Bay Seafood seasoning.

⭐️ SHREDDED CHEESE – Any cheese will work, I would recommend mozzarella or cheddar as they pair the best with eggs.

TIPS AND TRICK FOR SUCCESS


TIP #1: For best results, use a non-stick frying pan. Cook omelette on a low-medium heat, watching carefully to prevent overcooking.

TIP #2: Serve immediately: Omelettes are best enjoyed when served hot and fresh. Serve your crab omelette immediately after cooking to ensure the eggs remain fluffy and the flavors are at their peak.

TIP #3: Properly season the eggs, adjusting for any seasonings as needed. Be sure to season the beaten eggs with salt and pepper before cooking. This will enhance the overall flavor of the omelette

TIP #4: Be careful not to overcook the eggs, as they can become tough and dry. Cook the omelette until it is mostly set but still slightly runny on top. It will continue to cook from the residual heat after you remove it from the pan.

STEP 1: Beat eggs.

Ingredients
  

  • 4 whole eggs
  • 2 tablespoons sour cream (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspooon paprika
  • 1 tablespoon tallow
  • 1 can crab meat
  • 1/4 cup shredded cheese

Instructions
 

  • In a small bowl, beat eggs with a fork for 1 minute.
  • Add sour cream, salt, black pepper, and paprika to the eggs.
  • On a medium heat, add tallow to a non-stick frying pan.
  • Pour in beaten egg mixture and allow eggs to cook for 2-3 minutes. Cover frying pan with lid. Watch carefully to prevent bottom side of omelette from overcooking.
  • Once bottom side of omelette starts to develop a slight brown color, add crab and cheese to one side of the omelette.
  • Fold the omelette in half, turn off the heat, and allow to omelette continue cooking in its residual heat. Remove from heat and serve once the cheese has melted and the crab is warm.
