These flanken short ribs are unbelievably rich and every bite will melt in your mouth, with very little preparation work and seasoning involved. They are a perfect, quick meal for the Carnivore diet.

WHAT ARE FLANKEN SHORT RIBS?


Flanken short ribs are a fatty and decadent cut of meat with a 2:1 fat to protein ratio. When cooked properly, they produce a tender and flavorful result. The best part about this cut is that they cook very quickly, taking only 15 minutes to reach a super tender texture as they are marbled with fat, collagen, and connective tissues.

Compared to traditional bone-in beef ribs, flanken short ribs are cut across the bone. This results in thin slices of meat and small cross-sections of bone. Because they are thin, this allows for maximum flavour penetration. This cut is very popular in Korean cuisine (also known as LA Galbi), where they are often marinated and grilled or braised. Each cut piece will have of 3-4 small pieces of bone, in-between sections of meat and connective tissue.

This recipe is keto friendly and does not require modifications. However, if you would like to obtain the traditional Korean/Asian flavours, you can add additional seasonings such as coconut aminos (instead of soy sauce), sesame oil, grated ginger, green onions, and black pepper.

If you would like to keep the recipe more simple, consider just adding garlic and onion powder.

๐Ÿ‘‰ WILL THIS WORK WITH ANOTHER CUT OF BEEF?

This quick cook method taking only 15 minutes is only suitable for the flanken cut because they are thin and require a short cooking time. If you are cooking traditional bone-in beef ribs or boneless short ribs, then it will likely require a slow braise.

For traditional Korean/Asian flavours, consider adding coconut aminos, sesame oil, grated ginger, green onions, and black pepper.

๐Ÿ‘‰ IS THERE ANOTHER WAY THAT FLANKEN RIBS CAN BE COOKED?

You can also sear these on the grill (ie. bbq).

๐Ÿ‘‰ WHERE CAN I BUY FLANKEN SHORT RIBS?

Most grocery stores should carry them. Do also check your local Korean butcher and ask for non-marinated LA Kalbi, we have found that the cut quality tends to be higher at Korean butchers than at other grocery stores.

๐Ÿ‘‰ DO I NEED TO PREPARE THEM IN A SPECIAL WAY?

If you are purchasing from a Korean butcher they should be ready to cook or grill immediately. If you notice that your short ribs were cut unevenly or contain bone fragments, soak them in cold water for up to 30 minutes prior to cooking.

Equipment

  • 1 12×18 baking sheet with a rack

Ingredients
  

  • 1.5 pounds flanken cut beef short ribs
  • 1 teaspoon salt

Instructions
 

  • Preheat oven to 400F
  • On a 12×18 baking sheet, lay down aluminum foil or parchment paper to catch fat drippings. Lay short ribs down in a single layer on a baking rack.
  • Season both sides of the short ribs generously with salt.
  • Bake at 400F for 15 minutes.
  • {Optional} – After baking, turn on the broil setting on your oven and broil for 5 more minutes. This will help achieve a beautiful golden brown sear.
