Easy Chicken Liver Pate (Keto Friendly)

This is an easy chicken liver pate recipe that is keto friendly and low in net carbs. This recipe does not use any alcohol or starches and is perfect for your low carb or keto diet. The use of onion and garlic as aromatics makes this a great “beginner” dish if you are new to eating organs.

The recipe keeps very well in the fridge for up to two weeks and is a great condiment for your meals, and also acts as a great mid-day snack. We also like to have this as a mid-day snack, and pair it with Carnivore Crisps and pork rinds.

WHAT IS PATE?


Pâté is a French term that refers to a type of meat spread or paste that is typically made from liver, although it can also be made from other types of meat or fish. Pâté can be served as an appetizer or as part of a meal and is traditionally spread on crackers, bread, or toast.

Pate can be made with various ingredients such as herbs, spices, vegetables, even alcohol (brandy) and can be served cooked or uncooked.

INGREDIENTS & SUBSTITUTIONS


⭐️ CHICKEN LIVERS: A nutritional powerhouse that is loaded with iron and B vitamins. The quality of the chicken liver you buy will have a direct impact on the final flavour. If possible, I recommend trying to find fresh, organic chicken livers from a reputable butcher.

⭐️ GARLIC: You can use as much or as little as you like!

⭐️ ONION: A very complimentary ingredient to liver.

⭐️ BUTTER: We like to opt for pasture raised and/or grass-fed butter.

⭐️ SALT: Our favourite is Redmond’s Real Salt which is an unrefined mineral salt.

⭐️ GARLIC & ONION POWDER: This is optional, but I do like to add additional garlic and onion powder on top of the fresh garlic and onion used. I personally find it helps get rid of the “livery” taste and do not find it overpowering at all, but to each is their own.

HOW TO MAKE EASY CHICKEN LIVER PATE


STEP 1: Wash, clean, and dry the chicken livers. Remove as much moisture and sinew as possible with paper towel and scissors.


STEP 2: Prepare aromatics


A rough chop will be sufficient since these will all go in the food processor after baking.

STEP 3: Combine liver, onion, garlic, and seasonings.


STEP 4: Bake altogether until chicken livers are thoroughly cooked.


Livers should be cooked to an internal temperature of 165F, or until they are no longer bloody in the core.

STEP 5: Add baked livers, onion, and garlic to a mini food processor and puree on high for 1-2 minutes, or until all ingredients are combined into a paste.


Make sure you scrap the sides down with a flat spatula.

STEP 6: Add butter and puree on high for 1 more minute.


STEP 7: The pate can be served immediately. For best results, refrigerate for 3-4 hours or up to overnight to allow the texture to solidify.


TIPS & TRICKS FOR SUCCESS


TIP #1: Clean chicken livers as throughly as possible by washing them with water and patting them dry with paper towel. This helps reduce the metallic taste.

TIP #2: Ensure butter is at room temperature.

TIP #3: Taste test the puree and add additional butter as needed if you like the mixture to be more rich and creamy.

TIP #4: While the pate can be served immediately, refrigerating allows for a more “solid” texture.

HOW TO STORE LEFTOVERS


FRIDGE

Store for up to 10 days. To reheat, heat on high in the microwave for 5 minutes or in an oven-safe dish at 350 degrees for 30 minutes.

FREEZER

Store for up to 3 months. Thaw allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

This recipe is keto friendly and does not require any modifications.

This recipe is ketovore friendly as long as you can tolerate onions and garlic in your diet.

🥩 CARNIVORE

👉 CAN I SERVE THE PATE IMMEDIATELY OR DOES IT NEED TO BE REFRIGERATED?

It can be served immediately, but the refrigeration will allow the texture to solidify further. Whether you serve it immediately or after refrigeration does not impact the flavour.

👉 WHAT CAN I SERVE THE PATE WITH ON A LOW CARB DIET?

Pate is very versatile – treat it as a condiment and add to your meats or vegetables! It can also be paired with low carb crackers, flatbread, or tortillas.

👉 DOES THIS HAVE PATE HAVE A PUNGENT FLAVOUR?

The use of fresh onion and garlic, as well as garlic powder and onion powder, make this pate very “beginner friendly” and it has a very aromatic mild does not have a pungent flavour or metallic flavour at all.

Ingredients
  

  • 1/2 pound chicken livers
  • 1/2 small white onion, sliced
  • 3-4 cloves fresh garlic
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup butter, room temperature

Instructions
 

  • Preheat oven to 350F.
  • Clean and dry chicken livers, ensuring as much moisture is removed as possible. Remove and discard any sinew with scissors.
  • Slice onions and chop fresh garlic.
  • In a 9×13" baking try lined with parchment paper, add chicken livers, sliced onion, and chopped garlic. Bake in oven for 20-25 minutes, or until chicken livers are fully cooked through.
  • Remove from oven and allow livers to cool for 5 minutes.
  • Add baked livers, onion, and chopped garlic to a mini food processor. Add salt, black pepper, garlic powder, and onion powder. Pulse on high for 1 minutes, or until ingredients are all combined. Scrape down the sodes of the food processor intermittently.
  • Add butter to the food processor and pulse for another 1 minute.
  • Allow pate to cool in the fridge for 3-4 hours before serving.
