This easy oxtail recipe is made in the oven and requires only 4 ingredients. It is absolutely delicious, and does not require any advanced cooking techniques, beyond what any home cook can do. When it comes to oxtails, less is more!

A lot of cookbooks will focus on a slow braise or a stew, which usually calls for a whole list of ingredients and spices. Through my own experimentation, I now realize that oxtails do not need to be cooked with a ton of ingredients and fancy techniques to be done justice.

This easy oxtail recipe produces a dish that makes you want to lick the plate clean, but we highly recommend using a napkin. Plus, if you’re feeling a little boujee, you can tell everyone you’re eating the tail of a cow – it’s like the wagyu of the back end!

This easy oxtail recipe gets to a really nice golden brown colour, which includes a stove top sear and a slow braise in the oven. We use fresh garlic for additional flavour and let the garlic permeate the meat. The key is to make sure the meat is very tightly sealed. A tight seal prevents heat from escaping which preserves the flavour and texture.


WHAT IS SO SPECIAL ABOUT OXTAILS?


Oxtail, otherwise known as a cow’s tail, contains a ton of connective tissue. This connective tissue turns into a rich gelatinous meat after cooking. It is also incredibly rich in collagen, which is a vital protein for growth and repair.

When you cook oxtails properly, the meat is tender and succulent, releasing a deep, rich flavour. This flavor is very unique, and isn’t found in any other cut of beef. HOW TO MAKE EASY OXTAIL RECIPE

STEP 1. PREPARE


Clean the oxtails by soaking them in cold water.

Allow blood and bone chips to separate from the meat. Pat the meat dry with paper towel and ensure it is as dry as possible.

STEP 2: SEASON


Season the oxtails generously with salt.

STEP 3: SEAR


Sear oxtails in a cast iron skillet or dutch oven on high heat until they form a brown crust on the outside. Alternatively, you can brown these in the oven uncovered at 400F for 15 mins.

I prefer cast iron over a non-stick pan as it can maintain a higher heat to ensure a beautiful sear is reached.

STEP 4. COVER


Wrap the oxtails in foil and ensure that the aluminum seal is tight and no heat can escape.

The goal is to have the oxtails cook low and slow in its own heat, which allows the meat to fall off the bone to achieve the tenderness we desire.

STEP 5. BAKE


Bake in the oven until meat is fork-tender, sticky, gelatinous, and fall easily off the bone. I call this “meat candy”!

The incredible richness of the meat and the surrounding connective tissues and collagen add tremendous flavour. My taste buds have changed over time on an animal-based diet. I have found that salt is more than enough to bring the meat to life. Trust me on this one, you will never want to cook them any other way again.

TIPS & TRICKS FOR EASY OXTAIL RECIPE


✅ Soak the oxtails in cold water. This removes any impurities and blood chips producing a cleaner flavor.

✅ Getting a nice brown sear is crucial in maximizing the flavour of the end result

✅ Ensure that no heat is able to escape from the aluminum foil seal during the roasting process

✅ While you may feel tempted to add additional seasonings or ingredients, it is not necessary! Less is more!

DIET MODIFICATIONS

Add sliced onion, celery, and mushrooms for additional flavour. You can also sautee them these vegetables separately as a side dish. Oxtails will also pair well with any keto friendly vegetables such as garlic brussels sprouts or roasted broccoli. The oxtails are very rich in taste, so you not need any additional sauces to go with it.

🥑 🥩 KETO CARNIVORE (KETOVORE)

This is a perfect meal for the keto carnivore diet and no modifications would be necessary. For additional seasonings, add bay leaves, thyme and oregano.

🥩 CARNIVORE

Oxtails are a great cut of meat for the carnivore diet due to its high fat to protein ratio. Omit the fresh garlic and follow the same cooking technique to achieve the same fall off the bone texture. This actually makes for a perfect carnivore meal when only salt is used!

Yes, but in our experience, it is more effective to cook these low and slow in the oven to achieve the fall off the bone texture. We highly recommend oven roasting if you have the time.

Ingredients
  

  • 3 pounds oxtails
  • 2 teaspoons salt
  • 8-10 cloves fresh garlic
  • 1 tablespoon high smoke point oil, such as beef tallow or avocado oil

Instructions
 

  • Soak oxtails in cold water for up to 30 minutes. Pat dry with paper towel.
  • Season generously with salt.
  • On the stovetop, sear oxtails for 3-4 minutes per side until a golden brown crust is achieved.
  • In a 9×13 inch baking tray, lay down the oxtails and add fresh garlic.
  • Seal the tray with foil. Ensure that the aluminum seal is tight and no heat can escape.
  • Bake at 300F for 3 hours, or until meat is fork tender.
