Flanken short ribs, also known as cross-cut short ribs or Korean-style short ribs, are a type of beef short rib cut across the bone. The term “flanken” refers to the cross-cutting of the ribs into thin strips, usually about 1/2 to 3/4 inch thick. This cut includes both the meat and the bone.

⭐️ FLANKEN SHORT RIBS: Flanken short ribs can be found at most grocery stores. This cut is traditionally used for Korean barbecue. Each piece of flanken rib contains 3-4 small p ieces of bone between the areas of meat.

⭐️ REDMOND’S SMOKED SALT: An amazing way to season food with a unique smoky flavor. Pairs very well with all meats (warning: it’s very addictive and you will want to put it on everything)

⭐️ LIQUID SMOKE: Liquid smoke is a versatile ingredient and is often used in both commercial food production and home cooking

⭐️ COCONUT AMINOS: Provides a sweet flavour that balances out the smokiness of the liquid smoke and smoked salt. This is optional and you may substitute for Worcestershire sauce. If using Worcestershire sauce, the beefy flavour will be heavier.

HOW TO MAKE FLANKEN STYLE SHORT RIBS


STEP 1: Clean and dry flanken ribs. Cut into individual pieces.

TIPS & TRICKS FOR SUCCESS


TIP #1: Allow for natural release for up to 20 minutes if time permits.

TIP #2: You can save the fat rendered from the liquid of the instant pot and store it in a container for cooking!

TIP #3: Liquid smoke is very concentrated. It is better to start with a small amount and adjust to taste as needed, because an excessive amount can result in an overpowering smoky flavour.

HOW TO STORE LEFTOVERS


Store in an air-tight container, and add the juices directly into the container. This will ensure that the meat retains as much moisture as possible and does not dry out.

FRIDGE

Store for up to 7 days. To reheat, heat on high in the microwave for 5 minutes.

FREEZER

Store for up to 3 months. To reheat, allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

  • 2.5 pounds flanken short ribs
  • 1 teaspoon salt
  • 1 teaspoon liquid smoke
  • 1 tablespoon coconut aminos
  • 1 teaspoon garilc powder
  • 1 teaspoon onion powder
  • 250 ml water (or beef broth)

Instructions
 

  • Clean and dry flanken short ribs. Slice into individual pieces.
  • Season flanken ribs with salt, liquid smoke, and coconut aminos.
  • Add marinated short ribs to the instant pot and add water.
  • Pressure cook on high for 20 minutes and allow for natural release for 20 minutes.
