Greek Chicken Skewers In Air Fryer With Tzatziki

These greek chicken skewers are marinated in a Mediterranean blend of tallow, fresh garlic, lemon juice, and oregano. The bite-sized chicken is then threaded onto skewers and air fried to perfection, resulting in juicy and tender chicken meat that is guaranteed to be a family favourite! The tzatziki sauce paired with this chicken is tangy, bright, and is a magical dipping sauce.

⭐️ CHICKEN THIGHS – I recommend either chicken breast or boneless, skinless thighs for this recipe. Chicken tenders will also work, but you may need to fold each piece to “double up” as tenders can be quite thin. If you are using bone-in chicken, you will have to manually remove the bones. Sometimes the skin can get in the way.

⭐️ BEEF TALLOW – You can substitute for any high smoke point oil, such as avocado oil.

⭐️ FRESH GARLIC – Fresh garlic works best here but you may substitute for garlic powder if you do not have any on hand. If you love the flavours of garlic, feel free to use as much as you like.

⭐️ DRIED OREGANO – The staple herb to achieve the Mediterranean flavour of this dish. Substitute for dried thyme.

⭐️ SALT & PEPPER – We recommend Redmond’s Real Salt and the black pepper may be substituted for white pepper if you are oxalate sensitive.

⭐️ LEMON JUICE – Balances out the flavour that the oregano provides and brings a bright tanginess to the chicken.

⭐️ GREEK YOGURT – Make sure you opt for sugar-free and whole fat greek yogurt, as the thickness of the yogurt is needed to get the tzatziki flavour to the desired thick texture

⭐️ CUCUMBER – The focus of the dip is in the cucumber, which brings an airy brightness that creates the signature tzatziki flavour

⭐️ SALT – Used to draw out the water in the cucumber and provide flavour to the dish.

⭐️ GARLIC – Highly recommend fresh garlic cloves here.

⭐️ LEMON JUICE – Balances out the flavours of the yogurt and the cucumber to bring this whole dip together, and helps preserve the Mediterranean flavour combination.

TIP #1: For best flavour, marinade the chicken as long as possible (even overnight if you have time).

TIP #2: Cut chicken into even-sized pieces (at least 1″ thick) for best cooking results. Avoid using chicken cuts that have too much bone or skin, as they will get in the way of making the skewers.

TIP #3: If you are cooking the skewers on the grill, soak the wooden skewers in water overnight. This helps prevent the skewers from burning.

TIP #4: For the tzatziki sauce, removing all the moisture from the cucumber is key to creating the desired thick texture, so be sure to allow sufficient time for all the water to drain out of the cucumber.

TIP #5: Use fresh lemon juice for both the chicken and the dip, it provides a much better flavour than pre-packaged.


STEP 1: Cut chicken into bite-sized cubes about 1″ in diameter.

Avoid cutting chicken too small or too thin. If you are using boneless thighs and find that the pieces are thin, fold the piece of chicken into half before puncturing the skewer through, so it “doubles up” on the skewer.

STEP 1:  Shred cucumber and add salt. Let sit for 10 minutes. Drain as much water out of the cucumber as possible.

Adjust the seasonings to your taste and tolerance. For strict carnivore, omit the garlic, oregano, and lemon juice. Note that you will not achieve the Mediterranean/Greek flavours of this dish without the seasonings, but you can still follow the air fryer cooking technique to get some great chicken kebabs!

You can also assemble the marinated chicken onto skewers and place them into an air-tight container, and take them out before you are ready to cook them.   • 1.5 pounds boneless, skinless chicken thighs
  • 2 tablespoons beef tallow
  • 6 cloves fresh garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice

Tzatziki Sauce

  • 1 whole English cucumber
  • 1/2 teaspoon salt
  • 2 cups whole fat greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, crushed
  • 1 tablespoon fresh dill, chopped


Chicken Skewers

  • Chop chicken into 1" cubes.
  • In a medium-sized mixing bowl, add chicken, melted beef tallow, minced garlic, dried oregano, salt, black pepper, and lemon juice.
  • Optional – For better flavour, marinade in fridge for up to 3 hours or overnight.
  • Assemble skewers by using 4-5 pieces of chicken per each skewer.
  • Place chicken skewers in a single layer in the air fryer and cook for 20 minutes at 400F, or until chicken reaches an internal temperature of 165F.

Tzatziki Sauce

  • Peel cucumber and shred finely into a small bowl.
  • Add salt to the cucumber and let sit for 10-15 minutes or until most of the water is drawn out. Drain out all the water and squeeze out additional water with a paper towel.
  • Add crushed garlic, lemon juice, and strained cucumber to greek yogurt. Mix well and let sit in the fridge until skewers are ready to serve. For best results, marinade for up to 3 hours.
