These instant pot brisket skewers are Carnivore friendly and take about 1 hour to make, and are fall-apart tender. This is a fun and great alternative way of making brisket that is not time consuming and is not labour intensive!

The best part of these skewers is that they are perfect for meal prep. They can be made in advance and seared before serving. Only 2 ingredients are required, but

Brisket is a staple on the Carnivore diet, has a high fat-to-protein ratio, is economical and fill the whole family up for days! Using the instant pot still results in a very tender texture without the extra time needed compared to using a slow cooker.



INGREDIENTS & SUBSTITUTIONS


⭐️ BEEF BRISKET – We always keep the trimmings on, as it provides great flavour that allows the meat to stay tender and melt-in-your-mouth. You can substitute the brisket for blade roast.

⭐️ SALT – Using Redmond’s Real Salt, our favourite!

⭐️ WATER – You can substitute for any broth, including chicken, beef, or bone broth.

TIPS AND TRICK FOR SUCCESS


TIP #1: Ensure that skewers are placed single layer onto a wire rack inside the instant pot, so that the meat is not sticking to the skewers.

TIP #2: Try to use shorter skewers if possible, as this allows for more optimal placement when placing the skewers in the instant pot.


HOW TO MAKE INSTANT POT BRISKET SKEWERS

STEP 1: Prepare brisket by slicing into even-sized cubes. Season brisket with salt.

You may use any seasonings you desire for brisket, but we are keeping this recipe pure carnivore with just salt. Other seasonings that pair with brisket include paprika, garlic powder, onion powder, dried mustard, black pepper, and cayenne powder.





STEP 2: Thread beef onto skewers.

STEP 3: Place skewers into instant pot onto a wire rack. Add liquid and pressure cook on high.

For optimal results, ensure that the meat is not touching the bottom of the pan. This allows for air to circulate evenly around the meat.

Equipment

  • 1 pressure cooker 7-quart used for 3 pounds of beef brisket.
  • 7-8 short bamboo skewers 15 cm long

Ingredients
  

  • 3 pound beef brisket
  • 1 tablespoon salt
  • 1 cup water

Instructions
 

  • Prepare beef brisket by cutting into 1.5" cubes.
  • Season beef brisket generously with salt.
  • Thread pieces of beef brisket onto skewers.
  • Add 1 cup of water to the bottom of the pressure cooker. Place rack into pressure cooker. Place skewers in a single layer onto the rack, ensuring that the meat is elevated from the bottom of the pot.
  • Turn on pressure cooker to high and pressure cook for 40-45 minutes. Once done, allow 15 minutes for a natural release.
  • Place skewers into a pan and sear for 1-2 minutes per side, or until all four sides of the skewers achieve a dark brown colour.
