There’s nothing quite like the rich and succulent flavors of a perfectly cooked brisket. This is the ultimate guide to a very simple instant pot brisket.

Traditionally, achieving this mouthwatering dish involved hours of slow cooking or smoking. For the longest time, I thought that I was not able to achieve the flavours of smoked meat without a smoker at home. However, two simple ingredients is all you need, along with your handy dandy Instant Pot. This recipe can certainly be done in the slow cooker as well.

⭐️ BEEF BRISKET: When looking for brisket, find a piece that is well marbled. The meat should have a deep red color. Avoid briskets with a grayish tint, as this may indicate older meat.

⭐️ REDMOND’S SMOKED SALT: Any smoked salt will work but our favourite is always Redmond’s.

⭐️ LIQUID SMOKE: A few drops of this liquid gold is all you need.

⭐️ SAVOUR BLEND: Optional, but I added garlic powder, granulated onion, and black pepper for additional flavour. The smoked salt and liquid smoke will provide a majority of the flavour needed for this dish.

TIP #1: When it comes to liquid smoke, less is more. Be careful of overadding too much as the flavour can be overpowering.

TIP #2: For best results, allow time in the Instant Pot for natural release.

TIP #3: Slice against the grain for maximum tenderness.

TIP #4: Optional, but you may want to sear the brisket inside the Instant Pot for a few minutes to brown the edges. This adds more depth to the flavour of the final dish.


This meal will likely produce leftovers as it is such a big batch. When storing this instant pot brisket, keep the juices in a separate container so that you can moisten the meat up when reserving.


Store for up to 7 days. To reheat, heat on high in the microwave for 5 minutes or in an oven-safe dish at 350 degrees for 30 minutes.


Store for up to 3 months in an air-tight, freezer safe container. To reheat, allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

It’s not recommended to cook a completely frozen brisket in the Instant Pot. For even cooking and food safety, it’s best to thaw the brisket in the refrigerator before using the Instant Pot.

The size of your Instant Pot depends on the size of the brisket. This recipe calls for a small piece of brisket (around 2 pounds). For a 3-4 pound brisket, a 6-quart Instant Pot is usually sufficient. If you have a larger cut, consider an 8-quart Instant Pot.

The liquid smoke is typically enough as the brisket will render out some liquid as well. If you’d like, you may add a little bit of water or broth (less than 1/2 cup) just to cover the bottom of thep ot.

  • 2 pound beef brisket
  • 1 teaspoon liquid smoke (adjust up to 1 tablespoon)
  • 1 tablespoon Redmond's smoked salt
  • 3 cloves crushed garlic
  • 1 tablespoon granulated onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper


  • Cut brisket into appropriate size such that it fits inside your pressure cooker or Instant Pot.
  • Add crushed garlic, liquid smoke, smoked salt, garlic powder, granulated onion, and black pepper to the instant pot. Ensure all sides of the meat are evenly covered.
  • Cook on high for 75 minutes, and allow 15 minutes for natural release.
  • To serve, cut into 3/4" slices and ensure you are slicing against the grain for best flavour. The meat will render some liquid, which you can pour back onto the meat before serving.
