INGREDIENTS & SUBSTITUTIONS FOR INSTANT POT OXTAIL

โญ๏ธ BEEF OXTAIL – Oxtail refers to the tail of a steer or cow. It is known for its rich, gelatinous meat and is often used in stews and braised dishes. If you can’t find oxtail or prefer a different meat, you can use beef shanks, short ribs, or beef chuck as alternatives. However, keep in mind that the flavor and texture may vary slightly.

โญ๏ธ ONIONS AND GARLIC – Used as aromatics for flavouring, you may omit these to your taste and tolerance. Mushrooms will also serve as a complimentary aromatic.

โญ๏ธ GREEK SEASONING BLEND – A blend of salt, black pepper, onion powder, garlic powder, dried dill, and dried oregano. You may substitute for any blend of seasonings that you like. Other seasonings that pair well with beef include bay leaf, thyme, and rosemary.

โญ๏ธ BEEF STOCK – Substitute for water, chicken broth, bone broth, or any other braising liquid.

TIPS AND TRICK FOR SUCCESS


TIP #1: When searing the oxtails, do so in batches and avoid overcrowding. Be patient with the searing process as it allows the meat to lock in moisture and flavour.

TIP #2: Do not over-add liquid to the instant pot (even if you are tempted to cover most of the meat). The nature of the pressure cooker and long cook time will allow the meat will naturally release liquid. However, if you are choosing to go for a “soup” oxtail dish and would like the serve the meat with additional liquid to sip on, feel free to add more braising liquid.

TIP #3: If time permits, allow 10-15 minutes for a natural release. This is an optional step but helps the oxtails get extra tender.

Ingredients
  

  • 2 pounds oxtail
  • 1 tablespoon tallow
  • 1/2 large onion
  • 5 cloves garlic, whole
  • 300 ml water or beef broth

Greek spice blend

  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoon dill
  • 3 tablespoon oregano

Instructions
 

  • Dry and clean oxtails with a paper towel.
  • Turn Instant Pot on saute mode, add tallow and let it heat until fully melted.
  • Add oxtails to the Instant Pot, searing each side for 2-3 minutes or until meat forms a dark brown crust.
  • Add Greek seasoning blend, fresh onion, fresh garlic, and beef stock to the Instant Pot.
  • Pressure cook on high for 70-80 minutes. Allow 10-15 minutes for natural release if time permits.
