A keto twist on the traditional Filipino dish. Our Keto Chicken Adobo recipe takes succulent chicken thighs and bathes them in a rich marinade of coconut aminos, which replaces the soy sauce and sugar in the traditional recipe.

What I love most about this keto chicken adobo recipe is the balance of tanginess and savoury flavours, which are achieved with the balance of white vinegar and coconut aminos. Using chicken thighs results in a tender chicken that simmers to perfection.

Chicken adobo is a popular Filipino dish made with chicken, typically thighs or drumsticks. The chicken is then marinated and traditionally cooked in a flavorful blend of soy sauce, vinegar, garlic, and spices. It is known for its savory and tangy taste.

⭐️ BONELESS SKINLESS CHICKEN THIGHS: Chicken thighs works best for this dish. However, you may substitute for any other cuts of chicken such as breast or wings. Note that any cut with bone will take slightly longer to cook, but may produce a more flavourful and juicy end result.

⭐️ GARLIC AND ONION: Used as aromatics to flavour the chicken.

⭐️ WHITE VINEGAR: Classic ingredient in adobo that provides the tangy flavour. Substitute for apple cider vinegar or sherry vinegar.

⭐️ COCONUT AMINOS: Replaces traditional soy sauce, and has a natural sweetness as it is made from coconut sap.

⭐️ BAY LEAVES: Fresh or dried will work.

⭐️ WHOLE PEPPERCORNS: Can substitute for ground black pepper or white pepper, but whole peppercorns are what is used in the traditional dish.

⭐️ BRAISING LIQUID: Water, beef broth, chicken stock, bone broth will work. I would recommend chicken broth to bring out the best flavour of the chicken.


STEP 1: Marinade chicken.

Allow all the flavours to fuse with the chicken.

STEP 2: Prepare aromatics.

STEP 3: Sear chicken on stovetop.

Use a medium-sized stockpot or dutch oven.

The chicken may release some additional liquid after searing for a few minutes.

Add back marinade reserve once the optimal brown color is achieved on the chicken.

STEP 4: Bring to a bowl, then simmer until most liquid has evaporated.

TIP #1: Use a plastic bag or shallow dish to marinade the chicken. Make sure the chicken is evenly coated with the marinade. For best results, marinate in the refrigerator for at least 1 hour, or overnight for even better flavour.

TIP #2: Ensure the chicken is very dry, and use paper towel as needed, before adding the marinade. This ensures that the chicken does not release excess water during the searing process which can impact the colour.

TIP #3: Do not discard the marinade! It is used as the braising liquid while the chicken is cooking!


This keto chicken adobo tastes even better when it sits in its flavorful sauce for some time.


Make in advance and refrigerate it for up to 2-3 days. Reheat it gently on the stovetop or in the microwave before serving.


This keto chicken adobo can be frozen for later consumption. Allow it to cool completely before transferring it to an airtight container or freezer bags. It can be stored in the freezer for up to 2-3 months. Thaw it in the refrigerator overnight before reheating.

This recipe is keto friendly. Serve the keto chicken adobo hot, garnished with chopped green onions or cilantro, if desired. It also pairs well with cauliflower rice or steamed low carb vegetables.


This recipe is ketovore friendly.


As this recipe contains aromatics such as onion, garlic, and coconut aminos, this recipe is not suitable for strict or elimination Carnivore. However, loose Carnivores may find this recipe to be acceptable if they can tolerate the aromatics and coconut aminos.



For the best flavor, it is recommended to marinate the chicken for at least 1 hour. However, you can marinate it overnight in the refrigerator to enhance the flavors even further.


Chicken adobo is commonly served with steamed rice, but if you’re following a low-carb or keto diet, you can pair it with cauliflower rice, zucchini noodles, or a fresh salad. You can also serve it alongside steamed vegetables for a complete and nutritious meal.


The traditional dish contains sugar, which helps thicken the sauce. In this keto-friendly version, the sauce will be thinner as we are not adding any sugar or thickening agents which are usually carb based.

  • 2 pounds boneless chicken thighs
  • 6 cloves garlic, minced
  • 1/3 cup white vinegar
  • 1/3 cup coconut aminos
  • 3 whole bay leaves
  • 1 tablespoon beef tallow
  • 1 whole onion
  • 1 cup water
  • 1 tablespoon black peppercorns


  • In a medium sized bowl or ziplock, combine cleaned chicken with half of the crushed garlic (~3 cloves), white vinegar, coconut aminos, and bay leaves. Let marinade for 30 minutes to up to overnight.
  • Prepare white onion by rough chopping into pieces.
  • In a medium sized pot, add beef tallow and let melt on high heat for 1 minute.
  • Add remaining crushed garlic (~3 cloves) and sliced white onion to pan. Cook for 2-3 minutes until aroma is released from the onion and garlic.
  • Add marinated chicken thighs and sear for 2-3 minutes per side until golden brown color is achieved. Do not discard the marinade liquid.
  • Add the remaining marinade liquid and additional water as needed to cover 3/4 of the chicken. Bring liquid up to a boil, then down to a simmer.
  • Simmer uncovered for 20-25 minutes or until majority of the liquid has evaporated.
