Keto Pork Chops In Air Fryer (Extra Crispy)

April 3, 2023

Looking for a keto-friendly dinner in under 20 minutes? These keto pork chops are made with pork rinds instead of flour or breadcrumbs, allowing for a crispy exterior and a juicy moist interior. The best part is that they can be made in the air fryer! Only 3 base ingredients are required, and each serving contains less than 1g net carb.

Cooking boneless pork chops in the air fryer allows the meat to retain it’s maximum tenderness and juiciness. I tend to avoid cooking boneless pork chops with other cooking methods such as pan frying or oven-baked because this is a leaner cut of meat that is less forgiving when overcooked.

INGREDIENTS & SUBSTITUTIONS

⭐️ BONELESS PORK CHOPS – Substitute for bone-in pork chops, chicken legs, or chicken thighs.

⭐️ PORK RINDS – These are used to create that extra crispy exterior. As boneless pork chops are a leaner cut, the pork rinds add great fat and flavour. You may substitute this for almond flour, crushed almonds, or crushed pistachios.

⭐️ PARMESAN CHEESE– Substitute for any type of granular cheese, or romano cheese

⭐️ WHOLE EGG – I would highly recommend using whole eggs for the additional fat in the egg yolk, but feel free to substitute for egg whites.

⭐️ GARLIC/ONION POWDER – Can omit entirely or substitute for minced garlic.

⭐️ ITALIAN SEASONING – Optional but adds depth of flavour. Substitute for equal portions of dried oregano and basil.

TIPS & TRICKS FOR SUCCESS

TIP #1: Be generous with the pork rind coating, since there will be some transfer loss as we place these into the air fryer and cook them.

TIP #2: Check your pork rinds to see how much sodium it contains, and adjust the salt in the recipe accordingly. We find that some pork rind brands are saltier than others.

TIP #3: Be careful not to overcook because pork chops are fairly lean and overcooking will result in a dry texture.

HOW TO MAKE KETO PORK CHOPS

The pork rinds that I am using (Old Dutch brand) have quite a bit of salt in them already. I have not found it necessary to add additional salt to this dish, but that depends on your taste preferences and how much salt your pork rinds already have. Note that using parmesan cheese will also add natural saltiness to the dish.

STEP 1: Clean pork chops and dry thoroughly with paper towel.

STEP 2: Grind pork rinds (ground up) in a food processor.

If you have access to pre-ground pork panko,, that would be even more convenient.

STEP 3: Prepare dipping station

Pour pork rinds into a shallow dish and add your seasonings.

Feel free to add any blend of seasonings that you would like, but the combination of garlic and onion powder and Italian seasoning my go-to combination as it is simple but provides great flavour. While on the carnivore diet, I have found that my taste buds have simplified and my preference is to enjoy meat without excessive seasonings and sauces.

STEP 4: Beat the egg for 1 minute in a medium-sized bowl.

The egg is used for dipping so that the dry mixture sticks to each piece of pork.

Ensure that each pork chop is fully covered with the pork rind rub for maximum flavour! There will be some transfer loss as we place these into the air fryer and cook them, so make sure you are generous with the coating and feel free to add any excess leftovers onto the top of the pork.

STEP 6: Cook in air fryer.

I always use a silicone liner to help with clean up afterwards. The silicone liners are dishwasher safe!

Cook until they’re golden brown and crispy on the outside and cooked through on the inside. Be careful not to overcook because pork chops are fairly lean and overcooking will result in a dry texture.
