Keto Sausage Balls

These keto sausage balls are made out of Italian sausage. They are like mini fat bombs in your mouth! Super decadent and pack punched with flavour. As they are miniature, they work great as an appetizer or snack, but can also be a full meal as well.

This is a simple appetizer that can be served at parties, is family-friendly, and can be meal-prepped and consumed as a snack!

As with any meatball recipe, the “traditional” version almost always contains breadcrumbs as a binding agent. We substitute for a little bit of pork panko in this recipe to help the meat come together.

The key ingredient of these keto sausage balls is the Italian sausage. When looking for Italian sausage or breakfast sausage, be sure to check the ingredient labels. We always recommend avoiding seed oils and be wary of ingredients like monosodium glutamate, or other starches and agents.

INGREDIENTS & SUBSTITUTIONS

⭐️ ITALIAN SAUSAGE : You can use homemade, store-bought, or substitute for ground pork. Check the ingredient labels if using store bought and try to find the cleanest one, if possible.

⭐️ MOZZARELLA CHEESE : Can be substituted for parmesan cheese.

⭐️ CREAM CHEESE : Extra richness, can be substituted for greek yogurt.

⭐️ PORK RINDS : Used as the binding agent to replace breadcrumbs and/or flour.

⭐️ SALT & PEPPER : Most store-bought Italian sausages and pork rinds will already contain salt. I recommend salting at the end just to make sure you do not over-salt.

⭐️ ITALIAN SEASONING : Optional.

TIPS AND TRICKS FOR SUCCESS


⭐️ TIP #1: Most Italian sausage or breakfast sausage will already contain salt. Pork rinds or pork panko are usually also pre-salted. Therefore, I do not recommend adding salt until the meatballs are done just to prevent oversalting.

⭐️ TIP #2: Use room temperature softened cream cheese, as this will combine more evenly.

⭐️ TIP #3: Try to make your meatballs a consistent size so they cook evenly. You can use a scoop or your hands for this. About 0.75 to 1.5 inches in diameter is typical.

⭐️ TIP #4: Don’t hesitate to experiment with different seasonings, such as fennel seeds, red pepper flakes, or even different types of sausage for a unique twist on classic Italian meatballs.

⭐️ TIP #5: Keep the meat mixture cold until you’re ready to form the meatballs. Cold meat is easier to handle and less likely to stick to your hands.

HOW TO STORE LEFTOVERS


This is a fantastic appetizer to store in the fridge, or make in advance as a freezer meal.

FRIDGE

Store for up to 7 days. To reheat, heat on high in the microwave for 5 minutes or in an oven-safe dish at 350 degrees for 30 minutes.

FREEZER

Lay meatballs in a single layer on a baking sheet for 30 minutes before storing them in a Ziploc bag, as this prevents the meatballs from sticking. To reheat, allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

This recipe is keto friendly! You may want to simmering the meatballs in a low carb marinara or tomato sauce after browning, which allows them to absorb the flavors of the sauce, resulting in a delicious, well-seasoned dish.

This recipe is ketovore friendly.

🥩 CARNIVORE

For strict or pure carnivore, omit seasoning and only use ground pork instead of Italian sausage.

Ingredients
  

  • 1/2 pound Italian Sausage (makes 24 meatballs)
  • 1/3 cup pork rinds
  • 1/2 cup mozzarella cheese
  • 4 oz cream cheese
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon italian seasoning

Instructions
 

  • Remove any casing from Italian sausages.
  • In a medium sized mixing bowl, combine Italian sausage, pork rinds, mozzarella cheese, cream cheese, salt, black pepper, and Italian seasoning. Mix until completely combined.
  • Form meatballs using hands or a small cookie scoop, about 0.5" in diameter.
  • Place meatballs on a 9×13 baking sheet lined with parchment paper. Bake for 20-25 minutes or until fully cooked.
