INGREDIENTS & SUBSTITUTIONS


โญ๏ธ  GROUND BEEF – You may substitute ground beef with any type of ground meat, including ground turkey, pork, or chicken.

โญ๏ธ  CREAM CHEESE – This can be substituted with 1/3 cup of heavy cream.

โญ๏ธ  DICED TOMATOES – This can be substituted with 2 tablespoons of tomato paste. Note using tomato paste will result in a drier texture than canned tomatoes

HOW TO MAKE KETO STUFFED PEPPERS

STEP 1. PREPARE


Prepare peppers by cutting off tops and removing membranes. If the pepper do not stand up straight on their own, you can trim the bottoms slightly so that they do.

Chop garlic and onion

STEP 2. COOK ON STOVETOP


Cook garlic and onion on stove top with avocado oil.

Cook ground beef with taco mix until beef is almost fully cooked through.

Stir in canned tomatoes, cream cheese, and fresh parsley.

STEP 3. STUFFING PEPPERS

Ingredients
  

Ground Beef

  • 1 tablespoon avocado oil
  • 1/2 cup white onion, chopped
  • 1 teaspoon garlic, minced
  • 1 pound ground beef (85/15 or 80/20 recommended)
  • 6 whole bell peppers

Taco Mix

  • 1 tablespoon chili powder
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 can diced tomatoes (7 oz)
  • 2 oz full-fat cream cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup cheddar cheese, shredded

Instructions
 

  • Preheat oven to 375F
  • Cut off the tops of the peppers and remove the seeds and membranes. If the peppers don't stand up straight on their own, you can trim the bottoms slightly so that they do.
  • Crush garlic in a garlic press (or mince finely with a knife). Dice up onion and chop minced garlic.
  • On your stovetop, start with 1 tablespoon of avocado oil. Heat oil on medium-high heat for 1-2 minutes. Add minced garlic and onion and cook for 3-4 minutes until aroma is released and onion is translucent.
  • Add ground beef and taco mix and cook for 3-5 minutes until beef is fully cooked. Add diced tomatoes and stir in thoroughly. After 1 minute, turn the heat to low and add in cream cheese, fresh parsley, and stir until cream cheese is fully melted.
  • Scoop ground beef into peppers, leaving 1-2 cm of space on the top for cheese.
  • Add shredded cheese to the top of each pepper
  • Bake at 375 for 30 minutes.
