TIPS & TRICKS FOR SUCCESS


✅ Use high heat for the searing process. Be careful not to oversear the loin chops because they cook fairly quickly.

✅ Use a cast iron skillet for the searing step, because it allows for more even heating and maximum flavour penetration

⭐️ LOIN CHOPS: You can use lamb chops instead of loin chops, but the cooking time will vary depending on the thickness of the chops. Lamb chops are usually thinner and will cook faster than loin chops.

HOW TO MAKE LAMB LOIN CHOPS


STEP 1: Clean and prepare lamb loins

👉 WHAT IS THE DIFFERENCE BETWEEN LOIN CHOPS AND LAMB CHOPS?

Loin chops are slightly leaner and do not have a rib bone. They are cut a little thicker than lamb chops are, like a mini t-bone steak from the waist. Lamb chops come from rib part of the lamb, are usually smaller and thinner than loin chops.

👉 HOW CAN I MAKE MY LAMB LESS GAMEY?

You can soak the lamb chops in milk for a few hours or overnight to mellow out the gamey smell. Searing the lamb before cooking it in the oven also helps eliminate any gaminess.

👉 WHAT DOES LAMB PAIR WELL WITH?

Most common herbs such as rosemary, oregano, basil, sage, thyme, and mint will pair well with lamb. For side dishes, any roasted vegetables such as carrots, beets, brussels sprouts, and asparagus will compliment the lamb well.

Ingredients
  

For The Lamb

  • 1 kg lamb loin chops
  • 1/2 teaspoon salt

For The Marinade

  • 1/4 cup avocado oil
  • 10 cloves garlic
  • 1/2 cup fresh parsley
  • 1 tablespoon fresh rosemary
  • 1/2 teaspoon salt

Instructions
 

  • Preheat oven to 425F.
  • Clean and dry lamb loins with a paper towel. Season with ½ teaspoon of salt
  • In a small food processor, combine avocado oil, fresh garlic, fresh parsley, fresh rosemary, and remaining ½ teaspoon salt. Pulse on high for 1 minute until fully combined.
  • On frying pan or cast-iron skillet on high heat, add 1 tablespoon of avocado oil and sear lamb loins for 1-2 minutes per side until golden brown crust forms. Remove from pan and pour meat into a medium mixing bowl.
  • Add marinade to lamb. Ensure all pieces are evenly covered with marinade.
  • In a 9×13 baking sheet with parchment paper, lay down lamb loins in single layer.
  • Bake at 425F for 10-15 minutes depending on preferred doneness, 145F for medium rare and 160F for medium.
