If you’ve been missing the classic Southern chicken and waffles on a ketogenic or animal-based diet, you’ll love this recipe! This is a zero-carb recipe that features only animal-based products. The chicken is cooked in the air fryer and comes out very juicy and tender, and pairs incredibly well with these 2-ingredient fluffy waffles that are made in my Dash mini-waffle maker.

The waffles come out with great texture and these are so good you won’t even believe it’s low carb. This recipe is an absolute must try for your next weekend brunch! These can be enjoyed as is or paired up with eggs and bacon.

INGREDIENTS & SUBSTITUTIONS

โญ๏ธ CHICKEN THIGHS – You can use chicken legs or wings as well. I recommend bone-in skin on thighs as they provide the best flavour, are juicy and tender, and have a great fat:protein ratio.

โญ๏ธ GROUND PORK RINDS – I usually use the Old Dutch brand of pork rinds and grind them in a mini food processor myself. You can substitute with pork panko if that is what you have access to.

โญ๏ธ GROUND PORK – Ground chicken or beef will work, but I have found that pork provides the best flavour. The texture of ground chicken will make the waffles slightly drier and the flavour of ground beef makes the waffles heavier.

โญ๏ธ WHOLE EGGS – Opt for grass-fed or pasture-raised if that is available to you.

TIPS AND TRICK FOR SUCCESS

TIP #1: Be generous with the pork rind coating on the chicken, as there will be some transfer loss when the the chicken is moved in and out of the air fryer as well as during the cooking process.

TIP #2: For the waffles, use a food processor or magic bullet to blend the ground pork and eggs. This ensures a more consistent and incorporated texture, compared to mixing it by hand.

TIP #3: Since the waffles contain raw meat, be sure to cook them for at least 5 minutes to ensure they are fully cooked throughout. These waffles do take a little longer to cook compared to other chaffle/paffle recipes because of the raw meat.

HOW TO MAKE LOW CARB CHICKEN & WAFFLES


STEP 1: Prepare ingredients by cleaning chicken and grinding up pork rinds.

To keep this recipe suitable for a pure carnivore diet, I have not added any seasonings. Be sure to check the ingredient label of your pork rinds to see whether you need to add additional salt to the chicken – most brands of pork rinds are already quite salty.

You may add any seasonings as desired to your chicken. Seasonings that would pair well include oregano, garlic powder, onion powder, or Italian seasoning.

STEP 2: Beat egg in a small bowl.

STEP 3: Prepare dipping station

Dip each piece of chicken into the egg batter, then into the pork rinds.

STEP 4: Air fry chicken, flipping halfway.

STEP 5: Combine ground pork and eggs in a mini food processor.

I highly recommend using a food processor (or a magic bullet) as the ingredients will be better incorporated, leading to a more even final result.

STEP 6. Cook waffles in mini waffle maker for at least 5-6 minutes.

๐Ÿ‘‰ WHAT CAN I SERVE THESE LOW CARB CHICKEN AND WAFFLES WITH?

If you are on a ketogenic diet and allow yourself zero-calorie or plant-based sweeteners, feel free to add it as a condiment.

If you are on a carnivore diet, serve these with some sunny side up eggs or bacon!

๐Ÿ‘‰ WHICH CUT OF CHICKEN DOES THIS WORK BEST WITH?

This recipe will also work for bone-in pork chops, but you will need to air fryer them for another 3-4 minutes. Check the internal temperature of your pork chops to make sure they have reached internal temperature of 165.

๐Ÿ‘‰ CAN I MAKE THE CHICKEN IN THE OVEN?

Absolutely! Bake them at 400 degrees for 20-25 minutes or until the internal temperature has reached 165 degrees.

๐Ÿ‘‰ HOW DO YOU STORE THE LEFTOVERS?

Store chicken and waffles in an air-tight container for up to 5 days.

To store the waffles in the freezer, separate each waffle with parchment paper and store into an airtight container or ziploc bag. To reheat, you can microwave the waffle or put it in your toaster with the frozen setting.

For the chicken, it can be stored in an airtight container. To reheat, put back in the air fryer for 5-7 minutes.

๐Ÿ‘‰ DO I NEED TO GREASE THE WAFFLE MAKER WITH OIL?

It depends on your waffle maker and whether it is made of non-stick material. My Dash mini waffle maker has a non-stick coating and I have not found it necessary.

Instructions
 

Fried Chicken

  • In a small food processor, grind up pork rinds.
  • Clean and dry chicken thighs with a paper towel.
  • In a small bowl, beat 1 egg with a whisk or fork.
  • Dip chicken thighs into egg batter and then into pork rind.
  • Cook coated chicken thighs in the air fryer at 400F for 20 mins, or bake in the oven at 400F for 20-25 minutes. Ensure chicken has reached internal temperature of 165F for safe consumption.

Waffles

  • In a small food processor, combine 2 eggs, and ground pork. Blend into fully combined.
  • Preheat mini waffle maker for 2 minutes and use a spoon to scoop in batter.
  • Cook each waffle for 5-6 minutes. This recipe makes 3 mini waffles.
  • Serve chicken and waffles together.
