This easy low carb meatball recipe is made with ground pork and veal, and does not contain any flour or breadcrumbs found in traditional meatballs. They are incredibly juicy and moist, packed with fat and protein, and is perfect for a low carb diet. The ground meat compliments the pork rinds incredibly well, and you won’t even realize that this is a low carb recipe!

The meatballs have crispy edges, giving them that delicious and satisfying taste and crunch. They can be cooked either on the stovetop or in the oven, taking no longer 30 minutes to make. These low carb meatballs can be served with a low carb marinara or pasta sauce, or just eaten on their own.

INGREDIENTS & SUBSTITUTIONS


⭐️ PORK RINDS – Can substitute with almond flour on a 1:1 basis

⭐️ GROUND PORK/VEAL – Can substitute for any blend of ground meat, as long as the total proportion is the same to this recipe. Another common blend for Italian flavours is is ground pork, ground veal, and ground beef.

⭐️ PARMESAN CHEESE – Can substitute for Romano cheese

⭐️ SPICE BLEND – Can substitute for Italian seasoning

HOW TO MAKE LOW CARB MEATBALLS

STEP 1: Grind up pork rinds in a food processor.

STEP 3. Roll meatballs into desired shape.

Option #1: Cook on stovetop until a golden brown color is achieved on the outside.

TIPS & TRICKS FOR SUCCESS


TIP #1: If you choose the stovetop method, use a cast iron skillet for optimal golden brown crust

TIP #2: Always cook meatballs in a single layer and do not overcrowd the pan or the baking sheet

TIP #3: When rolling meatballs with your hands, apply light pressure but roll quickly. You can also wet your hands with a little bit of water to prevent sticking

TIP #4: Use an ice cream scoop when making meatballs to ensure that all the meatballs are the same size

WHAT TO SERVE LOW CARB MEATBALLS WITH


If you are on the keto diet, you can serve this with any low carb marinara sauce or sugar-free sauce of your choice! You can also make your own low carb gravy. Other side dishes that would go well include roasted zucchini, eggplant, bell peppers, or roasted spaghetti squash.

👉 CAN I COOK THESE MEATBALLS IN ANY OTHER WAY?

You can cook them in your Instant Pot with a rack, on high for 7 minutes and allow for natural release for 5 minutes.

👉 HOW DO I STORE ANY LEFTOVERS?

They can be stored in an air-tight container in your fridge for up to 5 days or in your freezer for up to 3 months.

👉 HOW CAN I MEAL PREP THESE MEATBALLS?

After rolling out the meatballs, lay them on a single layer on a baking sheet with parchment paper, and put them in the freezer for 30 minutes. After 30 minutes, the meatballs can be tossed into a ziplock bag or freezer safe container. This helps prevent the meatballs from sticking. The recipe can be double or tripled as needed. Every 1 pound of meat will yield around 2 dozen meatballs.

This low carb meatball recipe uses pork rinds instead of traditional flour and breadcrumbs that contain carbs. The pork and veal blend is mild but very tasty and incorporates well with the pork rinds. Yields about 20-25 1" meatballs.

Ingredients
  

  • 1/2 pound ground pork
  • 1/2 pound ground veal
  • 1/3 cup parmesan cheese, shredded
  • 1 whole egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon dried parsley
  • 1/4 teaspoon black pepper
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 cup pork rind, ground finely

Instructions
 

  • In a large mixing bowl, combine ground pork, ground veal, parmesan cheese, egg, garlic powder, onion powder, dried parsley, black pepper, oregano, and salt.
  • In a small food processor, grind up pork rinds.
  • Add pork rinds to the meatball mixture and combine until fully incorporated.
  • Using your hands, roll into 1" circular meatballs

Stovetop Instructions

  • On a frying pan, heat avocado oil on medium-high heat.
  • Add meatballs and cook for 8-10 minutes or until an internal temperature of 160 is reached. Flip meatballs as needed to ensure they do not burn on any edges.

Oven Instructions

  • Preheat oven to 350F
  • On a 16×20 baking sheet with parchment paper, lay down meatballs, leaving space between each meatball.
  • Bake for 15-20 minutes or until internal temperature of 160F is reached.
