INGREDIENTS & SUBSTITUTIONS

⭐️ GROUND BEEF: Substitute with any ground meat of your choice. 85/15 ground beef is what I use and recommend providing the perfect amount of flavour and richness, without allowing the muffins to be overly dry.

⭐️ SALT & PEPPER : Season to taste and use black or white pepper depending on your taste and tolerance.

⭐️ GARLIC & ONION POWDER: Used for additional flavour but can be omitted.

⭐️ GRASS-FED BEEF FLOUR: Used as a binding agent to keep the meatloaf in place, which can be substituted 1:1 for ground up pork rinds or pork panko.

⭐️ SUGAR FREE BARBECUE SAUCE: We prefer Primal Kitchen as it has the cleanest ingredients, but any sugar-free BBQ sauce or ketchup will do.

⭐️ SHREDDED CHEESE: I am using cheddar but mozzarella will work.

HOW TO MAKE MINI MEATLOAF MUFFINS


STEP 1: Combine ground beef with seasonings.

STEP 2: Scoop ground beef mixture into mini muffin tins and add barbecue sauce or ketchup.

TIPS & TRICKS FOR SUCCESS


TIP #1: Don’t overmix. Overmixing can lead to a denser texture in the meatloaf. Mix the ingredients until they are just combined to ensure a tender and juicy result.

TIP #2: If you use an ice cream scoop or a large cookie scoop to portion out the mixture, this can help you portion the meatloaf mixture evenly into the muffin cups. This will ensure consistent cooking times and perfectly sized muffins.

TIP #3: If you are using a leaner ground meat, ensure that you grease or butter your muffin tins before placing into the oven.

MAKE AHEAD INSTRUCTIONS & STORING LEFTOVERS

You can prepare the meatloaf mixture ahead of time and store it in the refrigerator for up to 24 hours before baking. Alternatively, you can also bake the meatloaf muffins ahead of time and reheat them in the oven or microwave when you’re ready to serve.

FRIDGE

Store for up to 7 days. To reheat, heat on high in the microwave for 5 minutes or in an oven-safe dish at 350 degrees for 30 minutes.

FREEZER

Allow them to cool completely, then place them in an airtight container or freezer bag. They can be stored in the freezer for up to 3 months. To thaw, leave them in the refrigerator overnight and reheat in the oven or microwave before serving.

This recipe is keto friendly! Meatloaf muffins pair well with a variety of sides. You can serve them with low carb roasted vegetables or salad.

Ingredients
  

  • 1 pound ground beef note: Makes about 24 mini muffins.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon grass-fed beef flour (Carnivore Crisps)
  • 1/3 cup sugar-free barbecue sauce or ketchup
  • 1/3 cup shredded cheese

Instructions
 

  • In a medium-sized mixing bowl, combine ground beef, salt, black pepper, garlic powder, onion powder, and grass-fed beef flour. Combine well.
  • Scoop mixture into mini muffin tins.
  • Add a small spoonful of barbecue sauce to each muffin, as desired.
  • Bake at 350 for 15-20 minutes. Top with shredded cheese and bake for another 5 minutes.
