Oven Baked Brisket

This homestyle oven baked brisket only requires a few ingredients for the marinade and produces a tender smokey flavor, with a similar texture to roast beef.

INGREDIENTS & SUBSTITUTIONS

โญ๏ธ BEEF BRISKET: We buy our beef brisket from Costco and it comes in 12-15 pound slabs. Usually we will divide this into 3-4 portions and freeze the pieces that we are not cooking immediately. For portioning, aim for 1/2 pound of meat per person.

โญ๏ธ YELLOW MUSTARD: I am using the classic French’s yellow mustard, which provides the best flavour for this brisket. Any mustard will work as the purpose is to act as a binder for the dry seasonings, but I would recommend staying away from a grainy mustard as those may cause the brisket to burn easily. Alternatively, you can use yellow mustard powder.

โญ๏ธ SALT: We are using Redmond’s real salt, which is an unrefined mineral salt.

โญ๏ธ BLACK PEPPER: The combination of yellow mustard and black pepper add a smokiness that you will want to have in your brisket.

โญ๏ธ GROUND CORIANDER: A secret ingredient! Adds a floral nuttiness to the brisket. Feel free to omit, but I would not recommend substituting this for any other seasoning.

โญ๏ธ BARBECUE SAUCE: We are using Primal Kitchen’s Classic BBQ sauce which is made of clean ingredients, has no added sugars, and is keto-friendly. Feel free to use any BBQ sauce of your choice that suits your diet.

HOW TO MAKE OVEN BAKED BRISKET


STEP 1: Portion (if necessary), clean, and dry beef brisket with paper towel. Add seasonings. Start with adding yellow mustard on all sides of the beef brisket, then generously coat the meat with the dry rub.

As this is a large piece of meat, you will want to make sure that all sides are coated generously so that the flavour of seasonings can permeate the meat evenly.

STEP 2: Cook in the oven uncovered.


After 1 hour, take the brisket out and add barbecue sauce. Opt for a clean barbecue sauce that has no added sugars or filler ingredients. We always recommend Primal Kitchen for the best sauces!

I am brushing on a thin layer, which you can adjust if you would like more sauce. Note that you can always add more at the end to serve, so I would start conservatively and add more as needed.

STEP 3: Cook in oven covered, until internal temperature of 205 degrees is reached.

Since this cooking method relies on the meat to hit a certain temperature, I would highly recommend using a meat thermometer or instant read thermometer to keep track of the internal temperature so it does not under or over cook.

For a 4 pound beef brisket, this takes about 2 hours at 300 degrees, but this will vary depending on your size of beef and strength of your oven.

STEP 4: Cool, slice, and serve

Letting the meat rest allows the juices to redistribute, which contributes to a juicier and tender texture. Being patient during this process is the hardest part because your whole kitchen will smell like a BBQ restaurant at this point!

I recommend carving into thinner slices so it is easier to serve and portion out.

TIPS & TRICKS FOR SUCCESS


TIP #1: Even though you may be tempted, do not skip ahead and carve the meat until you’ve allowed it to rest for at least 10-15 minutes. This is a crucial step that allows the juices to redistribute.

TIP #2: For best results, use an instant read thermometer as this will allow you to gauge when the beef will reach 205 degrees.

TIP #3: If you are in a rush, you can increase the temperature of the oven to 300 degrees. Note that the shorter the cooking time, the more tough the texture will be. Therefore, we recommend setting aside at least 5 hours for this whole recipe from start to finish.

STORAGE INSTRUCTIONS


This meal will likely produce leftovers as it is such a large cut of meat! When storing this meat, use an air-tight container and add the juices directly into the container. This will ensure that the meat retains as much moisture as possible and does not dry out.

FRIDGE

Store for up to 7 days. To reheat, heat on high in the microwave for 5 minutes or in an oven-safe dish at 350 degrees for 30 minutes.

FREEZER

Store for up to 3 months. To reheat, allow to thaw completely before reheating in an oven-safe dish at 350 degrees for 30 minutes.

This recipe is keto friendly (as long as you are using a sugar-free barbecue sauce) and does not require any modifications. Feel free to pair with any low carb vegetables such as cauliflower rice, roasted zucchini, broccoli, or brussels sprouts.

Brisket is a tough cut of meat that requires slow cooking to tenderize it. You can use either the flat cut or the point cut of brisket, but the flat cut is leaner and easier to slice.

๐Ÿ‘‰ HOW DO I KNOW HOW MUCH BRISKET TO MAKE?

If the brisket is your primary dish, aim for 1/2 pound per person. If this brisket is being served alongside other dishes for a larger gathering, aim for 1/4 pound per person.

๐Ÿ‘‰ CAN I ADD ANY OTHER ADDITIONAL SEASONINGS OR AROMATICS?

You can add any seasonings to your taste and tolerance. Other common spices used for oven baked brisket include paprika, garlic powder, onion powder, dried thyme, and dried oregano. For aromatics, you may use fresh onion, garlic, or mushrooms as desired.

๐Ÿ‘‰ CAN I MAKE A SAUCE OUT OF THE GRAVY?

Yes, you can collect the juices and warm in a separate pot with some pork gelatin powder to help solidify the juice. Pure pork gelatin powder is keto and carnivore friendly!

๐Ÿ‘‰ CAN I PREPARE THE BRISKET IN ADVANCE?

Yes you can, the brisket can be made and carved in advance. When ready to serve, heat back in the oven at 350 degrees for 30 minutes or until fully warm.

It will lead to a slightly better flavour but it is not necessary if you do not have the time.

Ingredients
  

  • 4 pound beef brisket
  • 1/3 cup yellow mustard
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon ground coriander
  • 1/3 cup sugar free barbecue sauce

Instructions
 

  • Preheat oven to 350F.
  • Portion, dry, and clean beef brisket.
  • Season all sides of the beef brisket generously with yellow mustard, salt, black pepper, and ground coriander. Place in 9×13" baking tray.
  • Bake for 1 hour uncovered.
  • Decrease temperature of oven to 280F.
  • Using a pastry brush, add a generous layer of barbecue sauce, ensuring all sides are covered. Cover brisket with aluminum foil tightly and ensure no air can escape.
  • Bake in oven for 4-5 hours or until internal temperature of the meat reaches 205 degrees. Use a instant read thermometer for best results.
  • Let brisket rest for 15 minutes.
  • Serve by carving into 1/2" slices.
