Lamb shank comes from the shin of the lamb leg. When cooked low and slow, it produces an amazing fall off the bone texture that is rich and flavourful. Lamb shank is relatively inexpensive compared to other cuts of lamb such as lamb shoulder or lamb chops. They are a nutrient-dense ruminant animal and a great protein option if you are on the keto or carnivore diet.

INGREDIENTS & SUBSTITUTIONS


โญ๏ธ LAMB SHANKS – Can substitute for lamb shoulder, but will need to be cooked for longer as shoulder is a much larger piece of meat

โญ๏ธ GREEK YOGURT – Can substitute for regular yogurt, preferably whole fat. However, greek yogurt will produce the best texture as it is naturally thicker than regular yogurt.

โญ๏ธ OREGANO, ROSEMARY, THYME – Can substitute for any greek seasoning mix

โญ๏ธ LEMON JUICE – Can substitute for vinegar or apple cider vinegar

HOW TO MAKE ROASTED LAMB SHANK


STEP 1: CLEAN

Prepare lamb shanks by cleaning and patting dry with a paper towel. You can purchase lamb shanks at any butcher.

STEP 2: SEAR


Set the oven to a high temperature and sear the lamb shanks until a golden brown crust forms. You may also sear in a frying pan or cast iron on the stovetop, with some oil.

STEP 3: MARINADE


Once lamb has developed golden brown crust, marinade the shanks with a Greek-inspired oil rub.

STEP 4: ROAST


Using aluminum foil, create an air-tight seal, such that no air can escape the roasting pan.

ZESTY TZATZIKI SAUCE


STEP 1: SHRED

While the lamb shanks are roasting in the oven, start working the tzatziki sauce. Shred cucumber and add salt. The purpose of adding salt is to draw out as much water as possible from the cucumber.

STEP 2. DRAIN WATER


Once water has been drawn out of the cucumber, drain well.

STEP 3: MIX INGREDIENTS


Combine greek yogurt, crushed garlic, lemon juice, drained cucumber, garlic, and dill together.

Adjust any seasonings to taste and chill tzatziki sauce until lamb shanks are ready to serve

TIPS & TRICKS FOR SUCCESS


TIP #1: If you are hesitant with lamb due to the gaminess, try soaking the lamb in milk for a few hours or up to overnight before cooking

TIP #2: For the tzatziki sauce, opt for whole fat or full-fat greek yogurt

You can also sear them on the stove top (dutch oven or cast iron skillet), which will be faster than the oven. You can also skip the searing step altogether and slow roast directly, but the flavour will be less rich.

๐Ÿ‘‰ HOW MANY LAMB SHANKS SHOULD I BUY PER PERSON?

When portioning out lamb shanks, plan for 1 lamb shank per person. Individual sizes may vary but lamb shanks are usually 1/2 lb to 1 lb each.

๐Ÿ‘‰ WHAT OTHER CUT OF LAMB WILL THIS RECIPE WORK WITH?

Ingredients
  

  • 3.5 pounds lamb shank
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 10 cloves garlic
  • 3 tablespoon beef tallow, melted (note: any high smoke point oil will work)
  • 2 teaspoon dried oregano
  • 2 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice

For The Tzatziki Sauce

  • 1 whole English cucumber
  • 1/2 teaspoon salt
  • 2 cups full-fat greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, crushed
  • 1 tablespoon fresh dill, chopped

Instructions
 

Searing Lamb Shank

  • Preheat oven to 450F.
  • Clean and dry lamb shanks with paper towel.
  • Season lamb shanks with salt, garlic powder, and onion powder.
  • In a 9×13 inch baking tray with aluminum foil, lamb shanks and add fresh garlic. Put in oven for 30 minutes until a golden brown sear forms on the outside.

For The Tzatziki Sauce

  • Peel cucumber and shred finely into a small bowl.
  • Add salt to the cucumber and let sit for 10-15 minutes or until most of the water is drawn out. Drain out all the water and squeeze out additional water with a paper towel.
  • Add crushed garlic, lemon juice, and strained cucumber to greek yogurt. Mix well and let sit in the fridge for up to 3 hours, or until lamb shanks are ready to serve.

Oven Roasting Lamb Shank

  • After lamb shanks have obtained a brown sear, turn down the oven to 300F.
  • In a small bowl, combine beef tallow, oregano, rosemary, thyme, and lemon juice. Add to seared lamb shanks.
  • Wrap baking tray with aluminum oil so that lamb shanks are fully covered and no heat can escape.
  • Roast for 3 hours or until meat is fork-tender.

    Absolutely ๐Ÿ’ฏ delicious ๐Ÿ˜‹. Having been born in Australia, I was pretty much raised on lamb and enjoy it whenever possible. In lieu of tzatziki I have been accustomed to a savoury mint sauce as opposed to the sweet mint jelly one can buy in the stores. Thank you for sharing this with your fans!
