⭐️ PORK SHOULDER: Pork shoulder or pork butt would work best for this recipe. Avoid tenderloin or pork chops as they are leaner and do not pull apart the same way that shoulder does.

STEP 1: Prepare pork shoulder.

For faster cooking in the Instant Pot, I recommend chopping your pork into ~1 lb pieces. This allows for more surface area coverage during the searing process as well.

STEP 2: Prepare aromatics

Chop onions and garlic roughly.

STEP 3: Turn Instant Pot onto sautee mode and sear pork shoulder.

This searing helps bring additional depth of flavour. You may also use a stove top pan or cast iron skillet, but I find that the Instant Pot saute mode is convenient enough (and doesn’t require you to wash any additional dishes!)

STEP 4: Add seasonings to pork and add aromatics into Instant Pot.

Make sure that all sides of pork are seasoned generously, and the onion and garlic are evenly distributed throughout. Pressure cook on high.

STEP 5: Pull pork apart gently with tongs and garnish with cilantro, if desired. Add back the liquid from the Instant Pot before serving.

TIP #1: Be patient with the searing process and ensure that all sides of pork are seared to a nice brown crust, this really allows the flavour to seal and develop during the pressure cooking process.

TIP #2: Choose the right cut of pork. For this recipe, I would highly recommend pork shoulder or pork butt, as these two cuts result in a flavourful pull-apart texture.

TIP #3: Adjust the spiciness level to your own preference. If you prefer a milder or spicier salsa verde pulled pork, you can adjust the spiciness by adding more or fewer chili peppers or hot sauce. Taste the salsa verde before adding it to the pork to ensure it has the desired level of heat.

TIP #4: The cooking liquid in the slow cooker is packed with flavor. You can choose to strain it and serve it as a sauce on the side, or you can mix the shredded pork with some of the cooking liquid to keep it moist and flavorful.

  • 1 Instant Pot


  • 5 pounds pork shoulder
  • 1 tbsp beef tallow
  • 1 large white onion
  • 6 cloves fresh garlic
  • 16 oz salsa
  • 2 tbsp Spicy Pluck seasoning
  • 1 tbsp dried oregano
  • 1 tbsp dried cumin
  • 1 cup fresh cilantro, chopped
  • 2 tbsp water


  • Clean and dry pork shoulder. Slice into equal size pieces around 1 pound each.
  • Prepare ingredients by slicing onion and garlic.
  • Turn on the sautee setting on the Instant Pot or Pressure Cooker. Add beef tallow and sear pork shoulder pieces for 4-5 minutes, or until a brown crust forms.
  • Assemble the pork into a single layer on the bottom of the Instant Pot. Add seasonings to the pork and combine well. Add salsa, onion, and garlic and mix so all ingredients are evenly incorporated inside the Instant Pot.
  • Pressure cook on high for 80 minutes. Allow 15-20 minutes for a natural release.
  • Add back liquid from Instant Pot to meat before serving. Serve with cilantro as a garnish (optional).
