The magic truly happens as the ingredients intermingle and simmer low and slow in a broth infused with a harmonious blend of simple spices.

The beauty of using a slow cooker lies in its ability to transform tough cuts of meat, like oxtails, into tender perfection. Set the slow cooker to its low setting and allow the stew to simmer for 6-8 hours. This slow cooking process allows the collagen in the oxtails to break down, resulting in incredibly tender meat.

ingredients for slow cooker oxtail stew

⭐️ FRESH BEEF OXTAILS: Fresh, meaty oxtails, also known as the tail of the cow. Oxtail is a gelatin-rich, flavour-packed cut of meat that is well suited for slow cooking or braising to achieve optimal tenderness. It is one of the most decadent and sought-after cuts of beef in the world.

⭐️ BEEF BROTH: Substitute for any broth or water.

⭐️ TOMATO PASTE: Any brand will work. If possible, find one with minimal ingredients (tomatoes only) and no added sugar.

⭐️ SAVOURY SEASONING BLEND: Garilc powder, onion powder, thyme, ground ginger, salt, and pepper

⭐️ RED BOAT FISH SAUCE: A pure, clean fish sauce with only two ingredients, anchovies and salt. If you are using any other fish sauce, watch out for the ingredients as many of them contain monosodium glutamate and sugar. You may substitute this for Worcestershire sauce.

⭐️ COCONUT AMINOS: Optional, but provides a balance to the fish sauce.

TIP #2: Oxtails are done when they are fork tender.

This meal will likely produce leftovers, especially if you are using the full batch (4 pounds). When storing this meat, use an air-tight container and add the juices directly into the container. This will ensure that the meat retains as much moisture as possible and does not dry out.
