Looking to make some smoked beef ribs, but don’t have an outdoor smoker? This recipe only requires a few simple ingredients and tastes exactly like restaurant-grade smoked beef ribs. In just three hours, enjoy tender smoked beef ribs at home without having to make a trip to the local barbecue restaurant!

INGREDIENTS & SUBSTITUTIONS


⭐️ BEEF BACK RIBS – We always buy these at Costco, but you can purchase at any butcher. Bone-in back ribs results in a very tender and fall apart meat. You can also substitute these for thick-cut short ribs.

⭐️ REDMOND’S SMOKED REAL SALT – Substitute for any brand of smoked salt, or use regular Redmond’s smoked salt.

⭐️ LIQUID SMOKE – Only a little is needed to achieve the smokey flavour we are going for.

TIPS AND TRICK FOR SUCCESS


TIP #1: Make sure that the smoked beef ribs that are completely sealed. Double sealing the meat with parchment paper and aluminum foil makes this more effective.

TIP #2: Putting the ribs bone-side down in a single layer allows for the most even cooking.

HOW TO MAKE SMOKED BEEF BACK RIBS


STEP 1: Season beef ribs with salt and liquid smoke.

FAQ FOR SMOKED BEEF RIBS IN OVEN


👉 DO I NEED TO ADD WATER TO THE LIQUID SMOKE

No it is not necessary for this recipe. You do not need to add additional moisture to the beef ribs.

👉 CAN I SUBSTITUTE THE BEEF RIBS?

You can substitute bone-in back ribs for bone-in short ribs or chuck short ribs.

Sous Vide Picanha Roast

Ingredients
  

  • 2 pound picanha roast
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder

Lemon Caper Sauce

  • 1/4 cup capers with juice, chopped
  • 1 whole lemon
  • 2 clove fresh garlic, minced
  • 2 tablespoon avocado oil
  • 1 tablespoon dried parsley
  • 1/2 tablespoon dried chives

Instructions
 

  • Dry and season picanha roast generously with salt, black pepper, and garlic powder.
  • Vacuum seal the picanha roast, ensure there is no air in the bag. Alternatively, place the picanha roast into a ziploc bag, leaving an inch unsealed, and displace into a pot of water, ensuring all the air is displaced out, before sealing the bag entirely.
  • Turn sous vide on to desired temperature (135F for medium rare) and sous vide for up to 3-24 hours. The longer you can leave it in the water bath, the better the end result will be.
  • Remove picanha roast out of the bag and pat dry.
  • Sear picanha roast on the stove top or broil for 5 minutes.
  • Let the roast rest before carving. When serving, carve against the grain into 1/2" slices.

Lemon Caper Sauce

  • Combine chopped capers, juice and zest of a lemon, minced fresh garlic, avocado oil, dried parsley, and chives. Combine and add additional salt if desired.
