This is a Gordon Ramsay inspired gourmet brunch idea! These smoked salmon french eggs only require 3 ingredients and comes out very decadent. The scrambled eggs are fluffy with the addition of grass-fed butter and pairs well with smoked salmon.

SMOKED SALMON VS LOX?


Smoked salmon and lox, are they the same thing? Many people use these terms interchangeably but technically lox is cured, while smoked salmon is smoked. Traditionally, both are usually served with a carb base such as bagel or crackers, along with cream cheese and other toppings.

INGREDIENTS & SUBSTITUTIONS

⭐️ SMOKED SALMON – When looking for smoked salmon, find one with that is pure or is as minimally processed as possible. If there is sugar used in the curing process, check the net carb count to see whether the amount used is negligible (ie. states sugar as an ingredient but has a net carb count as zero). Beware of any smoked salmon that is “candied” as those will contain sugar.

⭐️ WHOLE EGGS – Opt for grass-fed or pasture raised if it is available to you

⭐️ BUTTER – Opt for grass-fed if it is available for you. Grass-fed butter is a fantastic source of vitamin A and beta carotene.

TIPS AND TRICK FOR SUCCESS

TIP #1: Ensure that you add eggs and butter to a cold pan, not one that has been heated.

TIP #2: Use a very low heat to cook the eggs, and remove the pan from the heat if the eggs start cooking too quickly.

TIP #3: Turn off the heat before the eggs are done cooking, allowing the residual heat in the pan to finish cooking the eggs.

HOW TO MAKE SMOKED SALMON AND SCRAMBLED EGGS


STEP 1: Slice smoked salmon into thin pieces.

Smoked Salmon And Scrambled Eggs

Ingredients
  

  • 5 whole eggs
  • 100 grams smoked salmon, sliced thinly
  • 2 tablespoons butter

Instructions
 

  • Slice up smoked salmon into even, thin pieces, approximately 1.5"x0.5" each.
  • Crack eggs directly into a medium-sized, non-stick cold pan.
  • Add cold butter directly to the eggs.
  • On stovetop, turn heat to low, and place pan with eggs and butter.
  • Cook eggs on low heat and stir quickly and constantly with a spatula, allowing the butter to melt. If the eggs cook too quickly, remove the pan from the heat.
  • After 2 minutes or when the eggs are 75% cooked through, add in the salmon and gently fold. Turn off the heat, allowing the residual heat to finish cooking the eggs.
